Wonderful Chocolate Cake Recipe

    I baked this cake for a staff dinner ... it was a huge hit. Thought I'd share since it was super easy.

    My family calls it: upside down German chocolate cake

    1 Duncan Hines German chocolate cake mix (Ma says it has to be Duncan Hines ... she is picky, but she is also a great cook!)
    Mix calls for 3 eggs, water, oil
    At least 2 cups of coconut (the more, the better)
    At least 2 cups pecans (the more, the better)
    1 stick margarine
    1 8 oz cream cheese
    1 16 oz box of powdered sugar

    Preheat oven to 350
    Do NOT grease cake pan even though cake mix directions call for it
    9x13 cake pan

    Cover bottom of cake pan with coconut
    Cover coconut with pecans
    Follow cake mix instructions including mixing
    Pour mix over pecans
    Melt margarine and cream cheese (I do this in the microwave, stirring a few times ... it remains lumpy)
    Add powdered sugar to margarine/cream cheese, combine, will remain lumpy
    Drop powdered sugar/margarine/cream cheese mixture over cake mix (some of it will sink down, some of it won't ... that's okay)
    Bake for 60 minutes

    wow that sounds good!
    We have quite a few birthdays in June for our family plus Father's Day, so I will definitely incorporate this recipe in somewhere!

    This is a very good cake! I make it for get-togethers with friends and they always love it! :)
