    I've been so lazy that I am have been eating blueberry bagels with Tofutti cream cheese for dinner all week. I did make baked spaghetti squash with zucchini and marinara today, so perhaps there is hope.

    Last night I made this great Asian Chicken salad. It is a recipe I got from the cookbook Top Secret Restaurant Recipes. This was based on an Applebee's salad. It was very good and easy to make! I got this cookbook at the library and they have tons of good recipes!

    mm that sounds good!!

    I am making Chilean sea bass for dinner!

    * 2 teaspoons water
    * 1 teaspoon prepared Chinese-style hot mustard or Dijon mustard
    * 1/3 cup white miso (fermented soybean paste)*
    * 3 tablespoons rice vinegar
    * 2 tablespoons mirin (sweet Japanese rice wine)**
    * 4 teaspoons sugar
    * 1 teaspoon soy sauce


    * 4 5- to 6-ounce sea bass fillets
    * 8 green onions, trimmed
    * Olive oil
    * Toasted sesame seeds

    Whisk water and mustard in small bowl until smooth. Combine miso, vinegar, mirin, sugar and soy sauce in small saucepan. Stir over medium heat until smooth, about 3 minutes. Whisk in mustard mixture. (Can be made 1 day ahead. Rewarm over low heat before using.)

    Prepare barbecue (medium-high heat). Brush fish and green onions with oil. Sprinkle both with salt and pepper. Grill fish until opaque in center, about 4 minutes per side. Grill onions until beginning to brown, about 3 minutes per side. Transfer fish and onions to 4 plates. Spread sauce atop fish. Sprinkle sesame seeds over sauce and serve.

    Tonight will be a pork stew done in the slow cooker--I love the smell when I walk in the door after work!

    Cut up potatoes
    cut up onion
    add broth (veggie during lent) or water
    throw in any bell peppers left over, carrots too
    cut up 2 or 3 celery
    garlic
    put all that in crock until tender.

    Add milk or milk sub
    salt/pepper
    i have added hot peppers for some
    add all this right before serving

    add butter and bacon (unless lent) at table.

    I think tonight is out. My son is sick and I spent lots of time at the doctor today. Then I found out that since he is sick-I don't get to go on my gymnastics trip with the rest of the family!!! I am thinking OUT>

    last night we had a yummy new pasta dish - bowties with italian sausage & red peppers. YUM! tonight, we're going simple, good ol' tomato soup and grilled cheese. can't go wrong with that!

    We had some frozen boughten manicotti for dinner. My husband said he did not like it...and would rather have some of the good meals I have been cooking lately. Those good meals have been from the crock pot posting. Guess I better look up another good recipe. I really don't mind because they are so easy. Here is what we had for dessert:

    Mix 1/2 cup sugar and 3/4 cup Karo syrup--heat in microwave until you can mix.

    Add 1 cup peanut butter.

    Pour over 5 cups Special K cereal, spread in 9x13 pan.

    Top with melted chocolate chips.

    Tastes like a candy bar.

    Recently, we got had a brown paper lunch bag in with our Sunday newspaper. It was from the CHIPOTLE restaurant. If you brought the bag to the restaurant, you could buy one burrito and get one FREE!

    So, tonight we are having Chipotle burritos. :thumb:
    (I'll say that mine is FREE!)

    Frozen pizza for the kids (Friday in Lent)

    Fish sticks for Peter (YUCK!!! How does he eat that stuff??)

    I had some Irish Soda Bread with a cup of tea about an hour ago, so I'm calling that dinner.

    We are just having some penne with a really good jar sauce (don't tell my mom!). Maybe a salad on the side. Tomorrow is pot roast in the slow cooker!

    Do-it-yourself quesadillas--leftover chicken breasts, grated cheese, sauteed onions and peppers, chopped green onion and tomatoes and salsa--with a big green salad on the side.

    I just ruined dinner. I was "experimenting." Usually my experiments turn out really good but this time it was a disaster. My girlfriend is bringing over take out... thank god!

    tonight was easy night - grilled chicken & mozarella ravioli from costco - i boil them and drain and then toss with some olive oil & fresh parmesan. with garlic bread. YUM!

    Tonight we had delivery pizza, was not very good, but I was so hungry for pizza. We will have fish tomorrow. I have one piece of salmon, one of halibut, and 1/2 jar of oysters in the freezer. They need to be used, so I will cook all, bake some potatoes, make a green salad, and make everyone happy. My mom will be here, and she loves oysters, so she will be happy.

    yes! i love it! it's so yummy and really doesn't need sauce on it because it has so much flavor - although next time i'm going to try it with this basalmic sun-dried tomato pesto we have!

    I'll have to put the ravioli on hold until another day. Lauren has gone out to a Chinese buffet for lunch with a friend, so she definitely won't be eating dinner. I'm going to make shrimp baked with baby potatoes and garlic (she hates seafood and barely tolerates potatoes, so it's a perfect dinner when she's not eating).

    We had St Pat's at my mom and dad's house on Tuesday. Delicious, but that meant no leftovers at our house. So I'm making corned beef today (it's already simmering) and we'll have Reuben Sandwiches on the panini press tonight. I'm a vegetarian, so I'll just grill swiss on rye in the panini press. :p

    OK, I don't understand people who don't like seafood, but I get it. It smells.. But potatoes??? How can you not like potatoes??? :lol:

    I know, I know...she's "different" sometimes. She doesn't eat hamburgers (or anything else with ground beef) either.

    Jem, I made that pasta the night before Thanksgiving (I have a houseful for Thanksgiving)...It was a hit! Do you have any trouble finding the canned pumpkin year-round?
    I do love squash with pasta- I've also done butternut on pasta with a browned butter and sage...yummmmm:p
