Breaded cajun broiled tofu with spinach angel hair and vegan alfredo-style sauce with some steamed broccoli and asparagus. And I made peanut butter chocolate chip biscotti for desert. And I have some portobello caps marinating in a tamari-white wine sauce in the fridge for tomorrow! They will be grilled and turned into panini.
I am using a lot of the crock pot recipes. We had Indian Curry tonight. My husband never says anything about my cooking, but tonight he asked me to prepare that curry again someday. That was a compliment--I think. Anyway, the curry was wonderful. I only use the recipes that the crock pot lady's kids would eat.
I admit, most of the food I eat is not prepared/made at home. I was in the mood yesterday for Popeye's spicy chicken strips, mashed potatoes w/ zesty gravy, & mac & cheese, but I ended up getting food from Arby's instead. I got a turkey, ranch, & swiss sandiwch, a few mozerella sticks, & chicken nuggets. I don't like Arby's chicken at all.
We're trying another crockpot recipe tonight: Pasta Fagioli Soup http://crockpot365.blogspot.com/2008/10/day-305.html It smells AMAZING! I have a loaf of french bread to go with it, and if it tastes as good as it smells, we're in for a treat!

It was almost 70 here today (and I had 2 snow days last week, go figure). So we went out to our fave local place that has a second floor deck. I love sitting up there. I had Mahi Tacos. Yum!
OH, my kids love falafels but I don't know how to make tzatiki and with dairy allergies I would have to make it and switch it around. Got any tips?
I'm making spaghetti and meatballs served with asparagus and garlic bread. To make it especially easy on me, I'm using frozen turkey meatballs (that DF actually loves)!
I'm making steaks and loaded baked potatoes--butter, cheddar cheese, broccoli for me, all that plus bacon for hubby. I also have a craving for garlic bread, so I'm thinking about making that too. It's evidently carb central at Cassie's house tonight. :lol:
I am making Pasta Fagoli tonight as well Miss Jennifer. I have used that recipe before, and love it. Tonight we had Chicken (breaded and fried, then baked), mashed potatoes and saurkraut. I will make some spring rolls to go with soup tomorrow night. I have a veggie friend who showed me how to make spring rolls with tofu. I am not a tofu fan, but in the spring rolls, it is perfect. I am hungry for oyster pizza.
Ha ha, Old Teacher - apparently it's Pasta Fagioli night in Oregon! (I just noticed you're from Oregon like me!) The soup turned out fabulous - and made a HUGE batch - i think we'll be eating that soup all week!!
last night we had the DeLite chicken artichoke pizza from papa murphy's which is our favorite. Tonight salad w/ chicken. I have been making a soup or stew once a week which also lasts through the week. Nice and easy!

Not sure about tonite. Last nite we had steaks, potatoes & corn. I made a blueberry pie!!! HOMEMADE crust & everything!!! It was yummy especially since it was still warm & we had ice cream & whip cream!!!
Last night we had raviloi and garlic bread...I was also craving garlic bread! lol Tonight df has a meeting, so I'm going to a friend's for dinner. Tomorrow night is my first attempt with a pot roast in my slow cooker...wish me luck! I'm also doing a chicken dinner on Wed (buying the rotisserie one) and then a taco bake on Thurs (new recipe...never tried it before!). Being on sick leave and having df on a new schedule where he is HOME for dinner have turned me into a cooking machine! lol
My DH messaged me today letting me know he has dinner done for tonight and the house clean! I'm being spoiled!
That's hilarious because I made pasta fagioli last night but I'm in New York! :lol: I just got the recipe from my mother in law about a month ago and I've made it twice so far. We'll have the leftovers tomorrow night. Tonight we are having hard shell tacos. My husband got tired of me asking him what he wanted for dinner so he took my dry erase board and wrote out menus for the next 2 weeks Maybe I should have kept my mouth shut and stopped asking him what he wanted.

Ok I made baked ziti for the first time. It was ok, but I had too many noodles and not enough Ricotta. How do you get the Ricotta to "spread" over the noodles? Mine was kinda plopped out in lumps. I had too many noodles to add the second layer of Ricotta. So I just topped it with sauce and mozarella, which for some reason refused to melt! I think I would make it again, but does anyone have any tips? One recipe I found called for sour cream in place of Ricotta, and Provolone in place of mozarella. What do you think of ziti made with sour cream?
I mix my ricotta with one beaten egg. It makes it smoother and the texture comes out great when it's all baked. I wouldn't use sour cream I don't know any Italian who would do that! Also, I think provolone would be too strong unless you used it in a mixture of cheeses.
bonneb- Ya I would mix it with one egg and about a cup of shredded cheese- thats what my mom does. I want to make a real meal tomorrow - maybe some gnocchi
Dh is gone tonight, so I'm thinking take-out. I had In and Out for lunch, and then cancelled my workout with my trainer. I'm so bad today. I'm leaning towards chinese, although the thread about pizza sounds great. No body delivers, however, and laziness is at an all time high on this end. Chinese is close, so I'm thinking I might stick with them. What then, what to order??
Diznee, For potato soup, I make a light white sauce and thicken it with mashed potatoes, add chunks of potatoes, corn. I make the white sauce with grated onion and chopped bacon. I like to use whole milk or cream. If you want clam chowder, just add some clams. And Jem, my favorite Chinese is curry or Pai Thai (noodles). Of course, I can eat anything chinese. I have found some wonderful rice at the store, that I love. I do shop often at a restuarant outlet, that I discovered when shopping for my day care. Anyway, for high quality food, a restaurant supply house is great. I buy a lot of produce from them, but since my family is small, a 20 pound rib roast is too much. They do have some infused rice that is wonderful. It comes in flavors, but I like the chicken one. It cooks great and serves well.
Tonight we had spring rolls with tofu. Spring rolls are so easy to make, and are better then the ones in the restaurant. I just put in the veggies that we like, use some sweet and sour sauce, and we have a whole meal. You could serve rice with it, but the egg rolls scream eat me.
