Let's share what we're having and get some ideas from others!

We're having Greek Chicken Gyros tonight.

    That sounds yummy!

I have my new Rachel Ray cookbook sitting right next to me as I type. I need to actually open it and see if there's a recipe I'd like to try tonight.

Every other Friday is pizza night so I will either be picking one up at the pizza place or making it ourselves (hubby makes a great dough in our bread machine). Last night we had Italian stuffed peppers.

Found a recipe that I'll try tonight...pork chops in tangy fire-roasted tomato sauce...with some steamed veggies on the side.

Over Christmas break, my husband's mom made pork chops with (are you ready for this one?!) apple pie filling from a can and a little BBQ sauce. Sorry I don't know the proportions but it was so good!! I haven't tried to cook it but she said you put onions, and the apple pie filling, then the chops, and finally some BBQ. She poured the "apple/BBQ sauce" over the top when she served it. I'll have to experiment with it...

Emma & stgal~I was confused the first time I saw a post by STGirl, too! I had to reread a bunch of posts!

We'll probably do leftovers tonight, or DH will order a pizza before I get home from Sylvan.

    Interesting!

I actually have changed my mind and now I'm going to be making "Tango Joes", which is another Rachel Ray variation of sloppy joes. These sj's are made with a chimichurri sauce. I changed my mind quite often...

    Waffles and bacon for dinner!!!!

Easy, fast, and a treat for the kids.

Yesterday I tried this Carbonara recipe from Rachael Ray's 30 minute meals cook book. It came out pretty good, couldn't really tell that I left out 1 ingredient on accident!! No wonder my husband normally takes over the cooking!! haha.

Tonight....not really sure what we're going to make. But we've been making breakfast (when we can or we just take something to work), lunch and dinner for ourselves over the past 3 weeks...it was a resolution to ourselves to just eat healthier and not go out all the time, so far so good!

Probably left-overs. However, since my daughter doesn't "do" leftovers, she'll probably have chocolate chip pancakes.

My mom makes lasagna rolls all the time. They are much easier to make than a whole tray of lasagna.

Waffles and hot chocolate sound like a nice cozy meal!

I am making lentil soup tomorrow since it will be cold and snowy all day.

Marinated rib eye steaks that I will grill, twice baked potatoes, and roasted vegetables. Picked up fresh bread, too.

Add some chocolate chips to those waffles and that would be Lauren's dream dinner!

Kira's too. But we're out of chocolate chips.

We do, however, have chocoloate ice cream for dessert!

Do you still use an outdoor grill in the winter? I'm in NY too and I live for grilling season.

Done with dinner and it was yummy! I did end up making the "Tango Joes" - an Argentinean version of sloppy joes - from Rachel Ray's new cookbook. So good!

Yes, I do. I am able to pull it quite close to the patio door so I don't have to walk far. My outdoor porch light is right there so I can see what I am doing. Plus, they cook fast so I don't have to spend alot of time out there. But when there is a lot of snow the grill goes, too. Don't want to shovel. But I have a feeling we're done grilling. They are predicting 8 inches by tomorrow night. Thank goodness it's not Sunday night or I'd lose another day of school. Can't afford it. Already lost 3.

Fried Chicken breasts with fried rice, and gravy.
The gravy was made with a tad of the Lipton Onion/Mushroom mixture added as seasoning. It was yummy to hubby but I'd rather have oven baked chicken wings with hot salsa on them. A yummy combo!
Ya eat it 'cause ya want it, not 'cause ya need it,:D

I'm so jealous of all of you. I'm really not a cook. I can open a can, boil water, and punch the microwave buttons. Last night was Campbell's vegetable soup. Tonight was Angel hair pasta with "I can't believe it's not butter" and Nacho popcorn seasoning on top... Yep, that's about as good as it gets... Anyone wanna come over for dinner? Anyone, anyone? Bueller? Bueller???

TamiJ, do you know that you can buy mashed potatoes already cooked? I think you can put together a pretty good meal from the ready to eat section of the freezer.

I am diabetic and need to eat better at breakfast, so I bought some of the Jimmy Deans low fat sausage biscuits. They are really good, and my blood sugar is good until lunch.

We try to eat healthy. Last night was salmon, potatoes au gratin, and green beans. Tonight was oven BBQ chicken, potatoes and green beans (I don't like many veggies).

The already cooked potatoes have so much fat in them. I watch my fat intake, but nothing else. Of course my doctor did tell me that my blood pressure is a little high, and I need to lay off the Campbells soup. I get the low fat turkey sausage biscuits for my daughter. She loves them.
