What is everyone making tonight? I'm experimenting tonight. I decided to try eggplant parmesan. The chef in my sorority used to make it all the time and I loved it. I found a recipe on allrecipes.com that received good reviews. This is the first time my bf will be eating eggplant. It should be done in about 15 minutes, so I'll see how it turned out!
My mom makes excellent Eggplant Parmesean. Sliced eggplant, dip in egg, then lightly fry. Place in baking dish and top with spaghetti sauce, mushrooms, and parmesean cheese. Bake at 375 until lightly browned. We like it with spinach ravioli. As for us...I think we are going to try out some fondue. I have a broth recipe and we are going to simmer veggie and potatoes in the bottom while we cook our meat. Then split the broth over some noodles and enjoy! It's cold here and that sounds fun and warm. Tomorrow is chicken and corn enchiladas w/ lettuce, avocado, tomatoes and rice. Tuesday might be tuna sandwiches. Salmon salad later this week too...yum yum!
Oooh I love this thread. Tonight is roast pork tenderloin and southwestern potatoes. I have a great mango salsa for the pork and I guess I have a salad and some spinach. I got my roast in a little too late so we will be eating later than normal. Time change is messing with me.
My son requested pecorino romano crusted chicken-He loves this at Cheesecake Factory. I found a parmesan crusted chicken recipe online so I'm switching cheeses...salad...I'm vegetarian so skipping the chicken- I have leftover broccoli rabe and spaghetti squash from last night...sipping on a blood orange martini as I type this!
I am making a chinese chicken noodle bowl. It is essentially a chicken stir-fry with broccoli, carrots, bean sprouts, onion, and bell peppers. I make the noodles by using whole wheat spaghetti pasta and cooking it longer than recommended. After the chicken and veggies are cooked I add a chicken stock and soy sauce mix that thickens up and makes a sauce for the dish. It tastes great, is very healthy, and stores well for lunch later in the week! P.S. Sometimes I make it a little spicy by adding some crushed red pepper.
I do not fry my eggplant. Peel and slice eggplant. Place each piece in eggwash, then dredge in seasoned breadcrumbs mixed with parm cheese. (try panko breadcrumbs for a much lighter crumb)Lay slices on a lightly sprayed cookie sheet. Brush tops with olive oil. Bake for 6 minutes in a 350 degree preheated oven. Remove sheet, turn slices over and brush tops with olive oil. Bake an additional 6 minutes. Remove slices from sheet and place in a baking dish with sauce on the bottom. Place a layer of eggplant slices in sauce. Sprinkle with mozzarella and parm cheese. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top. Bake in preheated oven for 35 minutes or until golden brown. This also came from allrecipes. It is called Eggplant Parmesan II.
I made homemade asparagus soup and will have a panini sandwich (ham, tomato, monterrey jack cheese) with it. Just feel like some comfort food tonight.
That's the recipe I used. However, I must have skimmed over the step where you bake the eggplant in the oven for 5-6 minutes before putting everything together. Whoops!
I'm making homemade pizza bagels!! I've been craving pizza and wasn't feeling up to going out for pizza.
well last night for dinner I had Fried Rice, Steak and some Rissole's (with lots of tomato sauce!) which is okay. I'm not a great big fan of fried rice, and it depends on the steak I have. Generally for me, it's either chicken/fish with steamed sweet potato and salad because I'm like a health junkie. I just closed my eyes when eating the friend rice last night lol
We're going to Outback tonight, too! I think I want the crab cakes as an appetizer. Other than that, I have no idea. I'll probably get a grilled chicken breast or something.
We are grilling steaks tonight! Not sure what we're having with them though...I have about an hour until my hubby gets off work, so I'll figure it out then
My boyfriend made some chili that smells delicious. It's very cold and windy here tonight, so we're about to warm up some crusty bread in the oven and have a nice dinner Tomorrow we're having penne with vodka sauce, only a couple of ingredients and it's simply fabulous. In fact, it's my favorite dinner!
We had potato soup - with mushrooms and chunks of ham. Also, I had some Italian bread that I warmed up. It was canned mandarin oranges for dessert. Mmmm, good on a night after a blizzard where we got thirteen inches of snow.
It's fabulous: Equal parts blood orange juice and citrus vodka, splash of triple sec, splash of simple syrup...shake with ice...
I had baked ziti, garlic bread and salad for dinner tonight. probably one of my favorite dinners! tomorrow will probably be Italian Chicken and roasted potato's.
Tonight we had broccoli and cheese stuffed chicken and sweet potatoes. I made chocolate oatmeal caramel bars for a meeting I have on Wednesday, so the leftovers served as dessert. Tomorrow night it will probably be tacos. I have to make taco meat for my meeting on Wednesday. So I'll kill two birds with one stone.
