    Lentil soup with both sweet and spicy Italian sausage and escarole :)

    The rest of the roasted veggies and a slice of turkey left over from our Thanksgiving dinner. Also left over that needs to be finished tonight--one glass of lovely red cabernet and a slice of pumpkin pie!

    Cake. Really. I decided to use my calories on cake. I will probably regret it later, but now, :D

    Making this now. It's in the oven as we speak and it smells heavenly! Also made garlic roasted potatoes and homemade biscuits.

    I'm obsessed with stuffed chicken breasts. It's normally so freaking easy to make and delicious.

    Small update: cheese is oozing. Considering divorcing husband so I begin a relationship with this meal :D

    I will have to bookmark that one! I recently made jalapeno popper stuffed mushrooms. They were insane!

    Alright, so when did so many teachers become such good cooks?? I mean really some of these dinners are nearly gourmet!!! After reading this thread some of these meals sound incredible.Where do you all find the time???? Whose cheating???? Kidding...sort of!:lol:

    I typically get home before 5 and we don't have dinner usually until 6:30 so I have plenty of time to play with most any recipe.

    Teacher, I do the same! I said it tongue in cheek because I am completely amazed at some of these meals. I'd expect meatloaf and mashed potatoes, chicken and rice...but wow, a lot of these don't sound simple at all. Some seem as though they'd take a lot of prep work and time. As a group, it seems we could open an AMAZING restaurant!!!:p

    Cooking is my passion, therapy, and "me" time. I'm terrible, because everyone always says "cook with your kids", but I'm selfish-I want to just cook by myself! I try to let them help, but sometimes I just want to hack up an onion in peace and quiet, ya know?

    I used a few freezer meals but I didn't think they were that great. I like fresh stuff.

    Me too.... Except mine is baking!!!! LOL!!! Love the help, but have my ways of doing things.... LOL!!!
