I finally got to the grocery store, so I guess I have to cook. I'm making baked ziti for my son and a pot of chili for myself and my daughter (who probably won't eat much of it as she works in a restaurant).

Great guys! Last night, I had a nice salad w/ (organic) red leaf lettuce & spinach w/ all the ingredients I like (green onions, radishes, avocados, cilantro, etc.) & I added grilled salmon. It was so good! Another day last week was turkey tacos!!!
I'm making chili rellenos casserole. It makes a lot so I'll have leftovers for a night I don't want to cook!
I'm impressed by the homemade noodles. Last night we had Turkey sausage with onions and peppers over pasta. We add hot sauce, red pepper flakes and lots of garlic. I'm reading through these posts to get inspired for tonight.
Unfortunately, it’s a frozen meal for me tonight, and most nights really. I’m just too lazy to cook, so I can’t really complain!
Honestly, I didn't love it. It was okay, and I'll eat the left overs, but I really missed the cheese!!
I buy about a 2 pound rib end pork loin (not as expensive as the center cut) and I cut it into approximately 1 1/2 inch cubes.

I made a pork loin with a dijon sauce in the Instant Pot. I thought it was ok but my hubby didn't like it.
It's Friday & I'm having Cafe Rio for dinner...a salad w/ the habanero chicken & probably a taco or enchilada. Now that I have CR in my area, I choose that place over Chipotle now. I think they're more flavorful.
