    Last night i was EXHAUSTED from 2 days of teacher meetings. We made paninis.
    Tonight going out to a great Mexican restaurant for son and DIL's anniversary..great margaritas and a mariachi band.

    I found a recipe yesterday for butternut squash stuffed with ricotta; it's supposed to be cool enough today to turn on the oven, so I think I'll give it a try.

    Last night I made chicken tetrazzini using spaghetti squash instead of noodles. Tonight I'm making shepherd's pie with a mashed cauliflower topping. I just have to go and find some ground lamb!

    I went there once for BOGO and my husband hated it so we never went back :( It's pretty far away anyway although I think they are opening one closer. Then I can go without him LOL

    Between the time TG leftovers have been over a couple days after TG to now, I've had Olive Garden, Chinese food, & pizza. Time to eat healthier again!

    Sweet and Sticky and Spicy Fried Chicken Thighs.

    I almost never fry things because it's intimidating, it makes a mess to get all the oil out and find a place to put it when you're done, and anything I fry always never turns out good. The breading always turns out like a really oily pancake (soft and bready, not my fave -- I want crispy!). This was my first real deep fried success!

    I just bought a standalone frying machine which is easy to clean, doesn't require a lot of supervision, and supposedly fries well because it has a rotating basket. (the rotating thing didn't work this time though, but I think it might have just had trouble catching.)

    So that got rid of the intimidation, and while it was still somewhat messy, I know how to empty it better next time to reduce the mess.

    As for the batter, apparently the secret is to add a good amount of hard liquor which apparently keeps gluten from forming (which creates the soft bready texture) and evaporates quickly creating thin crispy air bubbles.. The skin turned out perfectly thin and crispy, and the thigh was juicy and hot.

    I also made the sauce myself using juice from a lemon, chili paste (can be found in the asian section in most grocery stores), and a lot of honey. I reduced it down on the stove, and drizzled it on the chicken, also drizzling more honey directly on the chicken for good measure. Turned out great. I'm drooling thinking about it again this morning.

    Tonight we're getting take out from my son's favourite Greek restaurant (their tzatziki is to die for!). He's moving to Nova Scotia tomorrow, so this is his "good-bye" dinner.

    His girlfriend is there, and he did live there for about a year and a half. He's been working, first in the Northwest Territories, and then here in Southern Ontario for the last year. He's finally found a job out in Nova Scotia, so they won't have to be long-distance any longer.

    I got an Instant Pot for Christmas so I've been trying out new recipes. The other night I made chicken and sausage cassoulet in the IP so there are leftovers for tonight!

    I just got an Instant Pot too! (yesterday in fact -- got that and my deep fryer in the mail) Let me know if there's anything good. So far, all I've made is rice.

    I have heard of so many failures that I am hesitant to get an Instant Pot.
    Last night was pizza, but tonight is salad and beef stroganoff.

    Last night was dinner out with gal pals....lots of wine and laughs.
    Tonight dh and I will make cider glazed salmon.

    There's an Instant Pot app that you can put on your phone. There's a ton of recipes on there. I've made hardboiled eggs in 7 minutes. They came out really good. Rotisserie chicken comes out pretty good depending on what size pot you have. I still have to play around with it. If you follow the directions there's nothing to be worried about. I think all the mishaps come from people who don't follow directions!!!

    The other night we went out for Hibachi. It was fun. Last night I made spaghetti squash and meatballs. I know I can cook the squash in the Instant Pot but I think the squash I had was too big. Something to look into for next time.

    We love hibachi. Hubby now makes fried rice at home (usually combo of rice and califlower rice). We pick up some of the white sauce from a local place. We use a rotisserie chicken. It is so good.

    Oh yeah, we usually eat cauliflower rice. When they gave me the rice and noodles (HUGE PORTIONS) I only could eat a few bites of each because I'm not used to eating that stuff anymore. One other person at our table ate all of the noodles and rice in about 2 minutes flat then said he didn't feel well. UMMM...I wonder why??

    Yup. We usually take it home. We also can keep track of the other stuff they put on. We usually get a container of the white sauce and can make 2 dinners from it. So it is worth it for our family.
    Tonight is wild rice casserole... I have to make a split recipe... one will be made with venison & they other ground turkey. LOL!!!

    Vegan Enchilada Zuchini Boats: Black beans grilled with pepper and onion and then baked inside of halved and hallowed zuchinis, topped with enchilada sauce. Surprisingly hearty.
