    Sounds wonderful ABC1223. I bought a rotisserie chicken the other day and am still eating it. I had it on a big salad last night and tonight will add it to pasta with an alfredo sauce from a jar.

    Tonight it's Jersey corn and Jersey tomatoes from the farm. Now I know summer has arrived. Homemade sloppy joes, too.

    That sounds heavenly!

    I've been without a barbecue for far too long and I finally went out and bought a new one. Tonight, I grilled Asian-glazed chicken and zucchini.

    Healthy "BLT:" - Turkey bacon, spinach, and tomatoes in a spinach tortilla. Maybe some low-fat ranch too.

    LOL !!! That buffet was a killer..all my favorites! I didn't eat anything the next day...just a small salad and some fruit buuuuut I brought home left over coconut cake so I had a bit of that too:rolleyes::p

    Thanx it was...I hardly ate the next day..just salads..but managed to have a little piece of coconut cake the next day that I brought home..cuz u know they twisted my arm :D

    I love coconut ANYTHING!!! *drool*
    Last night I made spicy Thai chicken lettuce wraps. Not sure what we're having tonight. Probably a salad since it will be so hot.

    Whatever it is, it will be easy. The other night I made veal meatballs. Well, I didn't want to splurge on ground veal, so I used ground turkey. The secret is that you simmer them in Campbells golden mushroom soup. Not cream of mushroom. Golden has a totally different flavor. Make veal or turkey mushrooms, season as you'd like (I use Adobo), drop in soup with 3/4 can of water, add diced celery and mushrooms. That's it. Simmer for 30 minutes or so, stirring often so they don't stick. Serve on rice or noodles. Surprisingly delicious.

    Made a stir fry with leftover chicken. Added all fresh veggies to it...orange peppers, broccoli, mushrooms, asparagus, red onion, jalapeño, and carrot. Served over jasmine rice.

    Out to dinner at new place. Had their avocado, strawberry almond salad on spinach with honey vingerette... it was so yummy!!!

    I'm making an avocado/strawberry salsa to put on top of grilled chicken tonight. I didn't think I would like that combination but it's really good!

    We have made our own avocado & strawberry salads. We put chicken, feta cheese, almonds, and use strawberry vingerette. That honey vingerette was so sweet it was great. Lol

    Last night was pasta with a great meat sauce and I had spicy turkey sausage, too. Tonight will be tilapia.

    I made Salsa Verde chicken in the crockpot. It's keeping warm until my husband gets home. I'm starving!! It smells really good.

    Had dinner with my son and his girlfriend at a little pub--the Thai inspired pizza with peanut sauce, chicken, red peppers, chopped peanuts and coconut came highly recommended. Sounds odd, but it was delicious!

    We were down swimming at cousin's house and they made brats in the grill...smelled yummy. We came home and grilled our turkey cheese dogs... didn't smell as yummy either. They were good had some corn on the cob & chips. Dessert chocolate thing I made yesterday. Lol.

    Last night, it was dinner at Kabuki's w/ shishito peppers, inari sushi, & chicken teriyaki w/ shrimp & veggie tempura.

    Tonight, I'm making a cobb salad, but without the bacon.

    I also love breakfast for dinner. I usually end up making Eggs Benedict if I want something with eggs. If they weren't so fattening I'd be making pancakes or waffles!

    We picked up something while we were out to warm up for dinner. I made a peach pie last night so that will be snack tonight. Probably make something with apples. We picked 11 lbs of apples Friday!

    I made baked chicken the other night, so I used leftovers to make chicken quesadillas tonight. I made some guacamole, too!

    I'm travelling to watch my daughter's soccer game and we'll go out for dinner after the game. if we go to my restaurant of choice, I'll have steak, garlic mashed potatoes, a dark ale, and chocolate peanut butter pie!

    Mrs C can I have dinner with ya. Hubby will grill steak, little roaster potatoes seasoned and sweet corn. Not sure dessert. May do something with our apples. Lol

    Pizza last night after driving home from golf tourney. Today is mixed grill: beef sliders, chicken sliders, veg burgers, hot dogs and a killer homemade macaroni salad. Sipping on a cocktail recipe I learned at the Barclays and my parents are coming over later for an anniversary Prosecco toast. 56 years for mom and dad xox

    Fri night was Mexican food! Chicken enchiladas, rice, & beans.
    Sat - I'm thinking a chicken & tofu teriyaki rice bowl
    Sat - Don't know, something light
    Mon - Going to fair, so fair food!!! :D
