Tonight is grilled vegetable Napolean w/mozzarella and a drizzle of balsamic glaze. I had it at a restaurant recently and was able to recreate it at home (for MUCH cheaper!!).
I tried a recipe for paleo tuna 'noodle' casserole tonight. It turned out pretty well. Definitely not the same level of 'comfort food' as the gluten filled, Campbell's soup laced dish from my childhood, but still a great, cleaner, alternative.
I tried out a new recipe which called for various veggies, sliced sausage, and a herb/balsamic vinegar marinade. Well, it came out great but i didn't realize until it had been in the oven for 20 minutes that the recipe actually said to cook the food on the GRILL. I have no idea how I missed THAT part LOL I guess I was supposed to make a foil "pan" and put it on the grill with all of the ingredients. Oh well, it still came out good.
Not dinner... but I made 3 batches if strawberry jam from berries we picked. Made my first rhubarb crumble pie from rhubarb we picked too!!!
Well, jam is in the freezer... pie is gone. Luckily I do have some more rhubarb. Lol. Now we are thinking we need to plant rhubarb. Lol
Abc... it is. It's the best in winter pulling it out. I bring some to my cousin &she says we love getting your jam. Lol!!!
Well, I made scrambled eggs, whole wheat toast and home fries...I was in the mood for breakfast late this afternoon
Southwestern pork tenderloin with a pepper jelly glaze, roasted fingerling potatoes with rosemary from my garden, and grilled asparagus topped with shaved Parmesan. Strawberry shortcake for dessert.
Leftovers mostly....rice casserole, cauliflower & broccoli (tossed it into a salad) and a cup of frozen yogurt
Pouring rain here 2day, so i'm just gonna be hanging out on my computer, just relaxing and having a late lunch...hotdog & pasta salad.
I went out for a late lunch and shopping with mom since today was my last day We had grilled chicken cesar salad and a cup of broccoli cheddar soup!!!!
Tonight I'm making Asian lettuce wraps. Sometimes I drizzle on some sriacha sauce or sweet chili sauce.
It's really warm here today. We'll be having cool salads: curried corn, broccoli slaw, steak over Caesar, French potato salad.
It's hot here too, so no cooking for me. We'll have a cold dinner of: deli roast beef, cooked shrimp, cheese, ciabatta, potato salad, coleslaw, kale salad, and fruit.
Too hot to turn on the oven today--------cold pasta salad, veggies w/hummus & double chocolate frozen yogurt
Much cooler today! My husband wasn't super impressed with cold dinner last night, so I'll cook some chicken to go along withe the left-over salads.
