I got a hankering for corn chowder, so I made a huge pot of it today from scratch for lunch. I'm sure I'll be having it again for dinner.
Cold dinner tonight--it's been too hot for too long--green salad, potato salad, tomatoes and cucumber with feta cheese, cold cuts, cheeses, baguette and tortilla chips with queso.
I made the same today, too! Had the local market steam a lobster for me and added that to the soup. Also made ham salad. So it's soup and sandwiches for dinner since the temp. is currently 100 and too hot to grill or put on the oven.
Leftovers! I've got a little bit of a venison loin we grilled the other night along with some new potatoes, or jerk pork sandwiches with garlic lime mayo and black beans and rice.
Pork Florentine, with spinach, a lot of mushrooms, heavy doses of nutmeg and cardamom, and a dollop of cream, plus fresh oregano and thyme from the garden, to go over pasta or rice. I haven't yet decided the vegetable(s).
I made a bowl of tuna salad for my hubby and another one for myself (he likes different stuff in his). I ended up dropping mine on the floor. Bowl broken and tuna everywhere. I ended up having a BLT since there was no other food in the house! I should really go shopping. Thank goodness I had some wine in the fridge at least!
I cheated: bought fried chicken, potato salad and broc salad at store. Too hot to cook, and too hot to eat.
On a side note, I am organizing all my recipes into a binder and coming across some that I'd like to try. They were tucked away, and I had forgotten about them. Hopefully, we will be trying new things!
We went out to a local BBQ place tonight. We got fried mac and cheese for an appetizer (I love it and I'm not even really a mac and cheese fan) and a pulled pork sandwich.
Tonight--grilled chicken breasts, pasta with fresh tomato sauce (made from the tomatoes and basil I got at the farmer's market yesterday), roasted rainbow carrots (also from the market), green salad and rhubarb tarts for dessert.
Yum! Last night we went out for sushi. Tonight... I'm not sure. We're trying to eat down the freezer, so either fish, venison, or chicken breasts.
Tonight is eggplant parmesan. I made it last night around 9pm (when it was cooler) since I hate turning the oven on when it's too hot. We will heat it up in small portions in the toaster oven tonight. It always seems to taste better the next day!
I am making Mexican stuffed peppers tonight with ground turkey, black beans, corn, salsa, cheese, and maybe some quinoa. I found the recipe on Pinterest and it is about 130 or 150 calories per pepper.
Didn't have breakfast or lunch yesterday, but somehow ate a wierd combo of foods: - 2 egg sandwiches - Morningstar meatless patties (should have stopped there!) - turkey jerky - strawberry shortcake ice cream I want a do over!
Last night went out with my love. I had freshly made gnocchi with pesto. Ran it off ths morning! Something light and healthy tonight.
On my own tonight, for the second night in a row, so I'll have my leftovers from last night--pan-fried rainbow trout and French cut green beans.
Found a recipe for shrimp with snow peas and bok choy over brown rice. Should be good (I don't like shrimp so I'm picking them out and giving them to hubby LOL).
