BF is away. I just made a mountain of pancakes. Didn't feel like grocery shopping, they sounded good. I don't have much pancake-making experience, but they're delicious. :lol:
Tonight was a chili night. We are in our rainy season, so while it´s still warm, it cools down more at night and when it rains. So, chili was quite appropriate.
Everyone deserted me, so I made a delicious stir-fry with leftover chicken and pork tenderloin, sweet onion, zucchini, snap peas, mushrooms, broccoli and peppers.
Tonight we're having salad with grilled chicken, mango, and my homemade lime/cilantro/sesame dressing. I have half a watermelon in the fridge so that will be dessert. Tomorrow is Mediterranean night!
No one was home and you still cooked! You are a much better person than me - I would have run to the nearest Chipotle!
My husband has been hungry for meatloaf, so we had that along with corn on the cob from a farm market and fruit salad (strawberries, grapes, kiwi, and peaches).
My dog would run away from home if I had cereal for dinner LOL He goes to lay under the dining room table as soon as I take a pan out of the kitchen cabinet. I used to have a ridiculous 20 minute dialogue with my husband every night about what to have for dinner. Now we just make a list of things for the week and he has to choose one of those things or he's out of luck!
Homemade basil almond pesto over linguine and shrimp, tomato salad, garlic bread, and freshly baked blueberry buckle.
Pork souvlaki, whole wheat pita, tzatziki, corn and pepper salad, grape tomatoes and sliced cucumber.
We decided on homemade spaghetti with non-homemade meatballs. I'm also going to make a monkey-bread style garlic bread and maybe green beans.
I made homemade basil fettuccini a few months ago. It took forever and made a mess in the kitchen. Do you have a pasta rolling machine? I think I need a new one since mine is old and hard to use.
Corn Flakes I spent all afternoon sealing off holes and cracks around my house before the big black racer in my yard decided to come inside and scare me to death. No cooking for me!
We had ham, mashed potatoes with gravy, and asparagus. We were out of ice cream, so I had to make a run to the grocery store.
Last night I made turkey burgers made with ground turkey, spinach and feta cheese. So good eaten with a little tzatziki sauce! Not sure what's for dinner tonight. I got this new Low Carb magazine so I'm looking at all the recipes and they all sound so good it's hard to choose one.

YUM!!! -- We're making chickpea curry tonight. We ate way too much meat the past two weeks in Cuba, we need to get our veggies on.
We had Reubans. Or Rachels. Whatever you want to call it! It involved rye bread, pastrami, sauerkraut, 1000 Island dressing, and happy tummies.
Oh goodness gracious how I miss rye bread...!!! Can't find it anywhere in this country. The barbarians!!
A Reuben typically has corned beef, sauerkraut, dressing, rye. A Rachel substitutes pastrami for the corned beef and cole slaw for the sauerkraut. Maybe you had a Rachben...or a Reuchel!
