I forgot I had to stop at two libraries to round up books for a research project we are starting at school. No running across town for me, so I made a frozen pizza. Ended up working out well as DH had to leave earlier than I thought for his meetings, so he had leftovers later.
It's Friday, so that means I'm not cooking! It has been a very stressful week.
That is why DH is always in charge of dinner on Friday!
I made a cheesy broccoli & rice casserole and i have fruit salad as well

Never heard of them, but I'm sure they're good. A few new restaurants are opening in my area (The Melt, Blaze Pizza, & Luna Modern Mexican Kitchen). I'm excited to try them, but I've tried Blaze Pizza already! I wish they'd bring The Curious Palate out here.
Just a really crazy afternoon here, but we don't cook on Fridays....its yummy wraps from our local Italian place delivery.

I have to toot my horn. This week I found a chicken taco casserole that everyone devoured! It rarely happens that I don't get some sort of complaint form at least one person at the table (we should start a chapter of picker eaters anonymous).
Tonight looks like we will be having soup. It is cold and rainy. I love making soups. This may be the last chance for the season so I am taking it.
Bell peppers stuffed with a mixture of ground turkey, shredded carrots, zucchini and sweet potato, diced tomatoes and salsa.
Meatloaf and some sort of veggies.
I'm BBQing a hot dog and some potatoes
Dh made grilled salmon which we put on slider buns with cucumber, chipotle mayo, and guacamole. Mexican grilled corn. Muy bueno

Homemade guacamole, oven fried chicken, homemade macaroni salad, deviled eggs, baked beans, and blueberry cobbler. Can you tell I want summer to come?
Chicken tacos and rice
Tried a new place in my area, Luna Modern Mexican Kitchen. It was quite good. My BF & I had:
- carne asada enchiladas
- firecracker Mexican shrimp
- steak & chicken fajitas
- warm butter cake ice cream dessert
How were the sriracha french fries? I love sriracha as a condiment!
I tried the brand by Ore Ida in the frozen food aisle & I really liked them & will definitely get them again.

I made a delicious roast chicken last night--rubbed with a mixture of garlic, ginger, Chinese five-spice, chili flakes, lime juice, soy sauce and olive oil.
Yummy stuffed peppers--lean ground turkey, quinoa, peppers, onions, and a little corn mixed with preservative-free salsa and baked with a bit of cheese. Stayed on my eating plan and I'm stuffed!
Probably chicken samosas, fish tilapia fillets, & fruit.

Tilapia crusted with a little fresh Parmesan and broiled, topped with pesto and diced tomatoes, served with angel hair pasta in an herb sauce.
That sounds tasty, ama. I have some cod in the freezer; I think I may try something similar. I love almost every kind of seafood, but am not a fan of tilapia, not sure why.
The best part was that it was SUPER easy, and yet came out delicious and looking super fancy! Literally, I put the fish on a pan covered with foil and sprayed with a little olive oil, grated some cheese on top of each, and put it under the broiler until it was done and the cheese was crispy. Take it out and spoon the toppings on. Definitely an impressive meal for company.
Must have been fish night. We had grilled coho salmon with a veggie medley.
I'm not a fan of fish in general but my husband is. He can tell the difference between farm raised and wild caught fish. If it was farm raised that could be the reason you haven't liked it. I read that it is hard to find wild caught tilapia in most areas. I have to travel 30 minutes out of my way once a week to buy wild King Salmon at a special market for my husband because he won't eat the one from the grocery store.
Scallops in a lemon wine sauce.
Had a fun, free day today & had lunch at this BBQ Cajun place in Long Beach & had some crawfish etouffee & a couple pieces of hot wings, fried alligator, & frog legs.
Then, got a Chipotle chicken salad bowl & Jamba Juice matcha green tea smoothie on the way home for dinner.
