    Dh is making teriyaki chicken and shrimp over rice. He's my personal chef....

    I'm feeling like a nice salad w/ all my faves:

    herb lettuce mix
    red onions
    hard boiled egg
    grape tomatoes
    mushrooms
    grilled chicken or turkey
    ranch dressing
    seasonings
    maybe black olives

    And frozen yogurt for dessert!

    Stir-fried snap peas, peppers and onions
    Quinoa with diced zucchini, tomatoes, onion and feta

    I made pork chops with a blackberry ginger balsamic glaze, roasted potatoes and onions, and broccoli.

    Tonight is DH's turn!

    That sounds so good, ama!

    Tonight, I'm making round steaks, sliced very thin rolled around a mushroom/ricotta cheese filling, and baked in tomato sauce.

    I can't take much credit for it--we bought the blackberry-ginger balsamic vinegar at one of those fancy olive oil stores on our honeymoon. :)

    I go to one of those fancy stores all the time! I'll have to look for a new one soon since I'm almost out of my pomegranate flavored vinegar.

    It's probably a good thing we don't have one anywhere near us! I'd be broke--they were all so delicious!!!

    I am teaching a class on crock pot cooking in a couple weeks, so I am dry-running my grocery list tonight, making 9 freezer meals, and we'll have that many to try out over the next few days!

    I have 2 chicken breasts. One's marinading in a garlic & herb marinade & the other in an Asian oyster sauce. I'll see which one I like better!

    9 meals ready to go, in the freezer!

    Mongolian Beef
    Tuscan Chicken
    Ranch Pork Chops with Potatoes
    Potato Soup
    Honey Dijon Pork Roast
    Teriyaki Chicken
    Beef Stroganoff
    Italian Beef Sandwiches
    Mango Pork

    The prep takes the most time. My daughter helped me, and we had everything prepped and ready to assemble in about an hour and a half, MAYBE a half hour to put everything in bags.

    Last night--baked chicken breasts with a lemon-herb rub, mashed cauliflower, cucumber and tomato salad.

    Tonight--baked salmon, sweet potatoes, green beans and carrots

    Dh roasted an assortment of veg...broccoli, eggplant, onions, peppers, mushrooms...we put over pasta. :p

    You seem to eat a lot of prepared food.. you can make similar and healthier entees from fresh ingredients.:2cents:

    Just threw together a chef's salad for tonight. Last night was zucchini noodles with homemade sauce (that I made over the weekend).

    Made a turkey breast the other day & hubby made a lot of gravy. So made another breast to make turkey pot pie. Will throw other half in a food saver bag for another time. It turned out so good! I made a apple crisp for dessert...so yummy!
