Lasagna & an organic veggie salad of grape tomatoes, basil, scallions, & English cucumber tossed in an Asian toasted sesame dressing.
Most likely will have a snow day tomorrow. So I cooked up a storm for this evening's game and will hopefully have leftovers during the week...homemade sloppy joes, cole slaw, New England clam chowder, lil smokies in sauce, jalapeño poppers, mixed together ingredients for chicken quesadillas, spinach/artichoke dip, and I bought an ice cream cake for dessert even though the kids wanted chocolate lava cakes.
Heade to Super Bowl party...Football food! Dh made Swedish meatballs and I made slutty brownies to bring
Burrito bowls with leftover rice and taco meat. Top with beans, lettuce, salsa, and sour cream EDIT: Oh and hot sauce! Can't forget that!
In the process of clearing out my deep freeze so that I can defrost it next weekend--tonight, it's sauteed shrimp with scallions and snap peas. Tomorrow, likely either chicken nuggets or meatballs (it's an adventure seeing what's gotten buried in there!)
Sweet potato casserole with pecan streusel topping, pan seared pork tenderloin with apricot glaze, zucchini, chopped salad, and a new Apple cake recipe. Had a snow day so could do some extra coking and just got the call that I have a 2 hr. delay tomorrow.
Mom came to visit this weekend, so my husband actually got fed real food for the first time in a while. I discovered that I have a better chance of being able to eat a real dinner without getting sick when I DON'T have to cook it. And, we have leftovers to get us through most of the week! --BBQ Pork Chops and cheesy potatoes --"Skillet lasagna"-ground beef, diced tomatoes, spinach, herbs, and mozzarella cheese --Turkey and gravy with smashed potatoes Plus, she made me a big batch of chicken salad and egg salad to eat for lunch!
Last night we had quinoa crusted chicken breasts, roasted diced squash, carrots, onions and leeks and a salad with spring mix and cucumbers. Yum!
Grape tomatos, scallions, & hothouse cucumbers tossed in a spicy peanut Asian vinagrette. Also a little fettucine alfredo.
Panera! Broccoli soups and 1/2 a chipotle chicken sandwich and hibiscus tea. Wednesdays are my: Weekly [home]Workdays. I CANNOT do homework at home. So Wednesday, either for lunchtime or dinner I go to Panera, eat tasty food and do my homework....
I've been wanting something tasty from Panara for some reason!! Every time I pass it I just want to go in (I've resisted so far) but I have next week off so I might just treat myself one day. THe soup and sandwich sounds good.
Peppers stuffed with extra lean ground beef, shredded zucchini, sweet potato and carrots, and diced tomatoes.
Cookpot went on before I left for work this morning. A Spicy pork casserole will cook through the day and be ready to serve when I get home from playing basketball. Will probably have it with baked potatoes.
Chicken cacciatore over linguine. I started it the other day in the crock pot, but then we got invited out last minute to celebrate a birthday.
