What's for Dinner?

    I'm cooking some beef liver I just got from the store! Haven't had liver in years, probably since I was 13 or younger. I'll probably just have some fruit or a little salad along with it.

    BBQ chicken, baked potato, corn and green beans. It was too hot to eat. Guess we will go back to salads. I have some leftover BBQ chicken to put on it.

    We had Chinese from a new place we found. Very good. I have Kung Pao and DH had curry.

    I had corn on the cob and fried zucchini. The corn was from the store, so it wasn't great. The best is home grown or what I buy from the local guys go sell it from the back of their pickup trucks.

    We had salmon grilled on cedar planks. That's the first time I've ever done it that way; it was delicious! I'm looking forward to my leftovers for lunch...

    Just bbq leftovers from yesterday. Hot dogs, sausage, mac salad, a nice "lettuce salad", and watermelon!

    I promised a friend a good PA home dinner... kielbasa, sauerkraut, homemade pierogi, pea & carrots, and berry pie with ice cream.

    Stir fry with rice. Feels nice and healthy. I hear the kids in the kitchen making brownies.

    Had some Taco Bell food & a little mashed potatoes & gravy. I want a do-over on today's dinner! Now I remember why I stopped going to Taco Bell for a long time! :mad:

    Chex coated chicken strips ("fake fried"), glazed carrots, salad, potatoes and green beans. Which means tomorrow will be takeout ;)

    Tami, I have made those enchiladas. I have tried lots of her recipes. So many are not low calorie.

    We started with cold soup - cucumber and tomato (don't tell mm!) pureed together with yogurt, a little fresh parsley, smoked paprika, and a bit of lemon juice - followed by a vegetable-intensive take on mole poblano: sliced onion, chopped carrot and turnip, cabbage, and a little pork in a sauce that involved dried apricot, two kinds of ground nuts, tahini, cinnamon, cloves, dried chipotle, regular pepper, chicken broth, red wine, and I don't recall what-all else. Both were pretty yummy.

    Nope, but she makes that clear from the beginning. I don't make her dishes often for this reason, but they are tasty. The only meatloaf I make came from her cookbook. There are rarely leftovers.

    I think I'm going to ask my hoosband to be in charge of dinner tonight, which will probably mean take-out. I don't feel up to cooking anything. :(

    Got takeout from one of my favorite Chinese restaurants! Shrimp fried rice, chicken & shrimp lo mein, chicken & veggies w/ sauce, & an cold Asian cucumber, tomato, & red onion salad.

    My son's 9th birthday party, so the menu:
    Fried chicken, baked beans, macaroni salad, potato chips, and birthday cake.

    We had a birthday party for my great grandson. It was long and cute. He as one on the fourth of July.

    We drove 3 hours to get here, so stopped at a new place because they gave 30 beers on tap. I had diet Pepsi. We happen to know the owner, and he plans to move into a huge place soon. I asked him if he could use some help with the menu, and he said I could help.

    We spent all day island hopping, and I spotted the biggest conch I've ever seen in my life. I was drooling over him. Made a stop by the fish market and picked up some conch chowder and corn for dinner.

    Tonight will be salad with grilled chicken, sliced granny smith apples, slivered almond I think we will have an Asian type salad tomorrow if my mango is ripe. Otherwise we can have tuna salad (can you tell I don't want to turn on the oven this week LOL).

    We should be going today to do our shopping for the week. I have a dinner menu that pretty much makes itself (I rotate the recipes to the back so each new card becomes the dish I will make for that day), but during the summer I don´t alway stick to it as much as I do during the school year (when I really need that order in my life). Mondays are chicken nights, though, so I will likely make a chicken dish.

    I think we'll probably have fake lasagna tonight. Ground turkey, noodles, spaghetti sauce, cottage cheese all mixed together in a pot on the stove. Easy, quick, tastes good.
