I've had a certain teenager who has had nothing but complaints about the menus lately, so this week has been declared: MOM'S WEEK OFF That's right-kitchen is closed. Mom will shop, when given a list, and provided the items on that list fall into the budget and into our healthy eating guidelines (loosely). But otherwise, Mom is on cooking vacation this week. Tonight, my lovely daughter prepared chef's salads. They were good. She did not realize they were quite so labor intensive, but she made it through. I believe tomorrow involves nachos of some kind.
It's 10 degrees in MID NOVEMBER!!!! YUCK!!!!! It is going to be a longgggggg winter!! Time to start making soup and stews!!!
I had flatbread w/ arugula, a little bacon, grilled onions, tomatoes, & of course some cheese. Very tasty!
I'm trying to avoid groceries since we will be out of town for several days, so we're doing quesadillas with deli chicken so there is minimal cooking involved.
We were going to have leftover (hubby made ribs & bbq meatballs) & I made blueberry cobbler for a new dessert...BUT power went out...So subway & their cookies & water (we keep bottled water)! Tonight is leftover night to help clean out fridge!!!
Last night had garlic seasoned fish filets & organic grape tomato salad. I've been trying to eater lighter (all month) since tomorrow's the BIG eating day!
Trying to eat light tonight. Zucchini noodles with pesto sauce. If I'm really starving i'll have some chicken with it. We won't be having Thanksgiving dinner until 5pm tomorrow so I'll have a small brunch type meal late morning then dig into the feast!!
My favorite is when Joey from Friends puts on Phoebe's maternity pants & calls them his "Thanksgiving pants." We watched the middle & the mom calls them her "holiday pants"...LOL!!!
LOLOL Well, i'm wearing a new dress tomorrow. It's not forgiving at all so I might have to cut myself off after a while if it starts to feel snug!!
I'm thinking cheese enchiladas, corn on the cob, and rice. However, it's almost like anytime I cook something more than a casserole these days DH always has to work late. So, I'm wondering if I should chance it and jinx myself, lol.
Since I did so much preparing for tomorrow it is leftovers...stuffed peppers, glazed carrots, homemade applesauce and fresh fruit salad.
Came home, made stuffing, three loads of laundry, dh and I vacuumed and dusted main level of the house, put leaf in table, took a short nap...and ordered out wraps and salad for dinner
Went out for Greek food with friends from work--tzatziki,Greek salad, pork souvlaki, roast potatoes and broccoli. Yum!
Made fudge, 3 pies, a birthday cake and cookies today. Then made lasagna dinner for my eldest's birthday. Cooking Thanksgiving dinner tomorrow. Friday will definitely be leftovers!
Mac & cheese w/ panko-breaded chicken cutlets. For dessert, a vanilla ice cream sandwich made w/ chocolate chip cookies.
Cheese fondue! Dippers will include: baby potatoes, crusty bread, naan, roasted cauliflower, zucchini, mushrooms, hard salami, kielbasa, meatballs, shrimp, tiny pierogies, and apple slices.
Change of plans: Asian noodle soup panko-breaded chicken cutlets chips & habanero salsa organic apple
Asian chopped salad, stuffed shells, garlic bread and homemade key lime pie and Christmas cookies for dessert. Needed something easy as I am cooking two big dinners the next two days.
Turkey, stuffing, mashed potatoes, Brussel sprouts, green beans, coleslaw, homemade buns, double chocolate mousse, holiday cookies, all topped off with a few glasses of lovely red wine!
Dinner yesterday was a catered French menu at my sister's home...boeuf Borguignon, coq au vin, ratatouille, croissants, quiches, assorted cheeses, wine, champagne, French martinis Today was a lovely brunch at my parents...
NYE dinner was at the Yard House: - bowl of clam chowder - shrimp ceviche - 2 shitake & grilled onion street tacos
Some mac & cheese & a tad of leftover rotisserie chicken, that's it. I had a good-sized plateful today for lunch at a Brazilian Steakhouse.
Last night, I made some delicious chicken breasts baked with sliced onions, lemon and lime wedges, olive oil, chili powder and lemon pepper. The rest of the family also had rice and coleslaw. I had a big side of broccoli.
Yum, Ms. I! Sweets and I went to friends' house for NYE. She and I spent the afternoon making creole food for dinner (red beans and rice, jumbalaya, crab cakes, bread pudding, and some kind of pecan cake). I've never had Creole and don't know how it is supposed taste, but I thought we made a pretty tasty dinner. Today I am making chicken and dumplings soup.
Tonight, I have no idea. Tonight's my BF's surprise b-day party at his sister's & they're having a potluck the last I knew. runsw/scissors, I love bread pudding!
