I'll be going out for brunch, so I'll have a very light dinner or skip it altogether.
I made broccoli & cheddar soup today because its a vey cold 40 degrees here and I thought a delicious, hot, thick soup would be perfect...taking some to work tomorrow for lunch
Made a chicken Alfredo lasagne for dh and ds for dinner. Quinoa and butternut salad with dried cranberries and pepitas in a honey citrus dressing for me.
Last night I made creamy pumpkin bisque. Tonight is roasted turkey breast with green bean casserole. I guess I'm getting a head start on Thanksgiving LOL
Lunch with DH and DS (home from college) was baked chicken and homemade fettuccine Alfredo with pumpkin praline cake for dessert. No supper needed tonight.
Baked ham, scalloped potatoes au gratin, and Greek style grilled eggplant.
Tell me about the eggplant, please!
Oh it is soooo delicious. Here is the recipe:
2 Tbsp olive oil, extra-virgin
2 tsp fresh oregano, chopped (plus more for garnish)
1 1/2 tsp balsamic vinegar
1/2 tsp table salt, divided
1/8 tsp crushed red pepper flakes
1/8 tsp garlic powder
1 medium uncooked eggplant(s), about 1 lb, sliced into twelve 1/2-in rounds
3 spray(s) cooking spray
6 Tbsp crumbled feta cheese
Preheat grill to medium-high.
Meanwhile, in a small bowl, combine oil, oregano, vinegar, 1/4 teaspoon salt, red pepper flakes and garlic powder; set aside.
Coat eggplant liberally with cooking spray; sprinkle with remaining 1/4 teaspoon salt. Grill eggplant until lightly charred and tender, turning as needed, about 10 minutes.
Remove eggplant to a serving platter; evenly spoon and spread oil mixture over eggplant. Sprinkle with feta; garnish with oregano (and red pepper flakes if desired). Yields 2 slices topped eggplant per serving.
Yum..totally sending this to my personal chef...dh.

My 5-1/2 hour drive home from visiting my daughter turned into a 7 hour marathon (fool accidents) and I didn't want to stop to eat. Dinner was about a pound of grapes, dried cranberries and sunflower seeds, coffee, vitamin water, and half a bag of chips . Dinner tonight: stir-fry of chicken, peppers and mushrooms.
Hubby made manicotti (homemade yesterday...sooo GOOD!!!
Just ordered online from Panda Express & my BF's picking it up. They don't taste the best, but they're OK & quick & easy to order from. I got:
chicken w/ mushrooms
chicken egg roll
Taco soup because it's easy and I was lazy today.
That's not as lazy as me having leftover soup!
Or me having soup from a package - add water & stir!
i LOVE Chinese food..i usually get shrimp fried rice, lo mein noodles, sesame chicken OR chicken & broccoli (white sauce), dumplings and an egg roll
I will be getting that this weekend!
Tonight I had sweet Italian sausage, rice pilaf, steamed broccoli and a romaine salad. I have a lot of left overs for lunch tomorrow and the rest of the week...yay
I went to the new Chinese place in town a few weekends ago when my cold was really bad. I got egg drop soup and an egg roll. It was so good!
Stuffed shells with ricotta, basil, and three cheeses. Made my own marinara too! I normally have a tub of it in my fridge but I hadn't made my own in a while.
If anyone has a decent meatloaf recipe, please be kind and toss it my way.
I just eyeball the amounts but I use ground beef, 1 egg, a splash of milk, whole wheat bread crumbs (I heard you could use stove stop stuffing instead) and a little A-1 (or ketchup or BBQ sauce). I mix it all up and if it feels too dry I add a bit more milk or if it's too wet a bit more bread crumbs. It always comes out pretty good.
Shrimp scampi over linguine, garlic bread, Caesar salad, homemade chocolate cake ( had left over buttermilk I needed to use)

I made a broccoli & cheese quiche (my lunch tomorrow) and having that with some left over Italian sausage for dinner tonight
I'm turning last night's leftover baked squash into squash and carrot soup.
Homemade enchiladas and Mexican rice
Salad bar at Claim Jumper.
I turned our leftover baked ham from Sunday into Ham and potato soup! I love when leftovers can be made into soup!
Dh made salmon with mango salsa and sautéed spinach with garbanzo beans.

baked mac & cheese in the oven (topped with Italian bread crumbs), steamed broccoli & salad
Pork loin chop stuffed with spinach and provolone, mashed cauliflower.
Dh is out with his boss for dinner. I'll make a veg burger for me and chicken for dh along with some sautéed spinach dh made last night.
Japanese food: Chicken teriyaki, tempura, gyoza, egg rolls, & California rolls!
Chocolate chip pancakes with toasted cinnamon pecans.
Hubby is gone, so 12 daughter got to pick dinner.
Chicken sausages and tater tots with raw red peppers and carrots. I'm having a very lazy night.
The kids ate at church youth group, hubby is out of town, so I made a small portion, and my own version, of the Pioneer Woman's beef with snow peas, and couscous.
