What's for Dinner?

    Made tortellini soup & a warm mixed veggie salad for dinner (broccoli, cauliflower & string beans) will have leftovers tomorrow:D

    Last night--peppers stuffed with lean ground beef, shredded zucchini and carrots, and canned organic tomatoes.

    Tonight--pork loin baked with apples, sweet onion and squash.

    Even though the temps feel like summer, I'm in a fall food mood.

    I'm visiting w/ my parents, so I think my mom's going to bring home Chinese food like we talked about when she left to go to church this morning.

    I think I'll make potroast when the temps cool off a bit. It was so warm today I had to put on some shorts and I HATE wearing shorts!!
    Tonight we're having zucchini noodles with vodka sauce. I'll be making chicken piccata this week if I can remember to get some white wine!

    Tonight I made the Duggar family tater tot casserole for me! I made my husband beef wellington and fresh vegetables.

    Spaghetti and meatballs with homemade sauce ( I never buy jar sauce) and meatballs! Delish!!!

    Leftovers the last couple of nights--veggie stuffed peppers and baked squash. The fridge is empty now, though, so I'll have to cook tonight. I know that roasted broccoli is on the menu, but haven't decided what else.

    We had fried chicken, gravy and rice. We also had leche flan for dessert. :)

    That will be me tomorrow since I have a busy afternoon once I leave the school...either McD's or a stop at the deli...haven't had a good deli sandwhich with a big deli pickle in ages.

    Last night I went out to a local diner with friends and had Eggs Benedict! This diner has the BEST breakfast foods (this place was actually shown on the Food Network several times) so I love having breakfast for dinner there!

    My mother and my mother-in-law are visiting this week and helping us with our new house. My mom brought several meals so we don't have to worry about cooking: chicken enchiladas, spaghetti pie, sloppy joes, and a beef roast. Yummy food without any work? I'm a happy camper! :)

    I went to the deli and got a turkey & cheese grinder with lettuce, tomato & mayo and a big ol' deli pickle-------with an orange soda:p Haven't had an orange soda in so long!
    I did this after running my errands after work (we will be having a big rain storm tomorrow) so I wanted to get that all out of the way so I can stay in my jammies tomorrow:thumb:

    SubCT, it took me a while to figure out what a grinder was. I love terms from different areas.

    Yeah, they are big! Its a sandwich on the loooooong bread and you can cut it in half (like a subway sandwhich) and eat it in 2 sittings if you wanted..but of course I didn't:p

    We're getting rain tomorrow also.
    Last night I had cake since it was a friend's birthday so I think I'll skip dessert tonight. I just had portobello mushroom pizzas (the mushrooms are in place of the crust) and some wine!

    Tonight, we had a roasted beet, red leaf and romaine lettuce salad with pecans rolled in pumpkin goat cheese drizzled with honey and BlackBerry dark bsalmic.

    Thanks. I've heard of Subs (Subway, of course), hero sandwich, and where I grew up they were called hoagies.

    A yellow cake with buttercream frosting....

    Need to make a banana crumb cake over the weekend so YUMMY!!!
    We made some pumpkin oatmeal cookies...dense, but the recipe called them breakfast cookies...

    We bake when it's cold & rainy...so this time a year a lot...good thing our freezer is full of blueberries we picked... blueberry crumb cake.

    I found a recipe for a pineapple banana cake...really yummy as well!!!

    Oh...hubby made brownies a few weeks ago & I made the buttercream frosting (found base online, but added milk to it) & everyone loved it...said it was like an oreo. Hubby's way of making brownies healthy is using the box & puree black beans... but you have to use the dark chocolate he said in regular you can kind of taste beans in the dark...don't know the difference...

    :eek: That sounds like the most amazing salad ever created *DROOL* There's a shop nearby that sells gourmet balsamic vinegar in tons of flavors and my mission in life is to try every one of them.

    I'm drooling......

    Last night was a quick pizzetta from Subway--we were on the road and almost late for my daughter's soccer game.

    Tonight will be pork tenderloin stuffed with swiss cheese and asparagus, tomorrow I'm making beef shanks for the first time!

    LOL! In north Jersey, it tends to be sub or even hero while in south Jersey/Philly influence, many call them hoagies!:D
