What are some of the other variations you have tried? This sounds so yummy!

I change up the veggies and cheeses. Zucchini/Mozzarella, broccoli/cheddar, spinach/feta or swiss, I even tried chopped kale and cheddar but that was only OK not great.
Yesterday I made one and sprinkled crumbled bacon on top (the REAL bacon bits that you can use for salads. I think it was Hormel). I am going to try a spicy one with jalapeno and pepper jack cheese. Not sure what veggies I'll use but probably bell peppers, mushrooms and onions. You can probably chop up whatever veggies you have in the house.

Falafel. I'm going to bake it instead of frying, but it still comes out pretty good.

Another church dinner tonight...this time at my old church. All the Lutheran churches in the area have a fall dinner--I'm pretty sure we could go without cooking on Sunday evening for the next two months if we wanted!

I've only been there twice. I really liked it but it's really too out of the way to go often. Maybe I'll go again when they have that teacher appreciation discount like last time.

Someone gave us eggs from the chickens she raises so tonight I made eggs with peppers and onions, turkey sausage and toast. It seemed like a Breakfast for Dinner sort of night!

No, I've never tried that either. We buy the jarred kind that is in the case with the lettuce. :) I think it's Marzani brand?

This weekend I am shopping for ingredients to make freezer-to-crockpot recipes. Has anyone tried these? Do they turn out well? Our Mon. and Wed. evenings are going to be crazy for a couple of months, and I am hoping crockpot cooking will be the easiest way to go.

Years ago there was a big thread on crockpot meals. Maybe you can find some ideas from it. I do love my crockpot during the school year!!
