What's for Dinner?

    On Wed, enjoyed a nice sirloin steak dinner w/ wild rice, baked potato w/ fried zucchini, buffalo chicken fingers, & loaded potato skins at Black Angus.

    Yesterday, I know this isn't dinner, but had a nice omlette breakfast at Mimi's Cafe.

    Last night we had chicken breasts on the grill, with some yummy new potatoes and zucchini from a farmer's little produce stand outside of town. Delicious! In fact, I'm about to eat some leftovers for lunch...

    We have this at least once a week. I really hate turning on the oven in the summer. The stuffed grape leaves are an aquired taste but I have had them for years since my some of my relatives are from Greece and always had them along with lots of other Greek and Mediterranean specialties anytime I went over to their house.

    At the Lazy Dog Cafe today, I had their sundried tomato, spinach, & cheese dip & chips, pastrami sandiwch, & Japanese cucumber salad. Mmm!

    Not really, I kind of hate to say. I really have to be in the mood for it, but I find it relaxing when I do. During the summer, I eat out more often. The only thing I've made lately are salads. I also like making my own potsticker recipe sometimes. In the past, I've made pasta mushroom bake, fried thresher shark on a bed of rice, fried oysters, & cornish hens.

    Making some chicken enchiladas tonight. Eating out all the time adds up quickly, so I try to cook as often as possible.

    We had beef ravioli with tomato sauce with corn on the side. Very basic but it was requested. Hopefully tomorrow we can grill brats.

    Mixed greens salad with cucumber, tomatoes, sauteed onions and peppers, chicken, and avocado. (Oh...and a couple of glasses of pear chardonnay).

    I just stuffed a tomato with tuna salad and had some pickles on the side. For dessert I'm having "ice cream" made with frozen bananas.

    We are having cheese and chicken enchiladas with avocado green sauce, rice, and a spinach salad without ranch dressing!

    Watermelon for dessert.

    I was thinking of making homemade banana ice cream but decided we've had enough dairy today.

    Watermelon! Yum! I have not had any yet this summer, but I love it. Way better than typical desserts, at least to me.

    I bought a watermelon today but have not cut it up yet.
    Tomorrow for dinnerr I am making Philly cheese steak stuffed peppers. I guess watermelon is a good dessert!

    I just had...

    Apple Juice, Rice and Chicken. As in the chicken is being cooked in apple juice! It is my favorite!

    I made a beef stew today. A big pot at that. It was yummy. I know it´s summer, but summer is our rainy season. It still warms up, but not like spring.

    This is an odd combo, but ceviche, chicken shu mai, & coconut shrimp.

    I guess that was early enouh to be lunch because my BF was hungry later & we made a Boboli pizza with red onions, mushrooms, & turkey.

    We had a big country lunch today: fried green tomatoes, corn, pork & beans, fried apples, and biscuits. Yummy!

    I wasn't hungry for supper. Awhile ago I had a bowl of homemade blackberry cobbler with vanilla ice cream.

    I have not had Quiznos in so long! They have Subway here, but Quiznos is my favorite.

    TamiJ, yeah, Subway is good too, but I like Quizno's better. I also have a Jersey Mike's & Charley's Grilled Subs here. Used to have The Great Steak & Fry, but a few of them closed up all around the same time in my area.

    BF just called and told me he would cook this evening--I'm not sure what that means we're having. We went out to Texas Roadhouse for his birthday dinner last night--I had pulled pork, Caesar salad, and a baked sweet potato. I was going to have the leftovers for lunch today, but I just wasn't that hungry.

    We do this about twice a week....... it is healthy.....

    Edit to add: A couple times a week we don't eat so healthy ..... I LOVE TEX-MEX ....... :p:p
