Well, rhubarb is a vegetable (or is it a fruit??) so that's kinda healthy, right? :D

Tonight I am making Mexican stuffed peppers!

Tonight I have a cabbage all wrapped up in foil, with some butter and seasonings, and we'll throw it in the campfire. About an hour later, peel off the black outside and it is amazing!!

I tried a new recipe for quesidillias tonight. They were super yummy and not too difficult! They might make it into the regular dinner rotation!

I was bad! I ordered pizza. Hubby actually wanted pizza. He never wants pizza so I jumped at the chance of no cooking.

Tomorrow night we're going to a very classy restaurant with a prix fixe menu. I can't wait to have my "no cooking" night!

I rarely eat fried meat, but I was really in the mood for some fried chicken, so I got that (spicy kind) along w/ cajun rice & cajun fried fish from Popeye's.

Trying to get through some of the meat that's been in the freezer for about as long as it should be. I'm braising some beef cubes with chili powder, onions, lots of garlic and some beer. We'll have roasted sweet and white potatoes, cauliflower and coleslaw.

Tonight we're having some left-overs from yesterday- my husband made "Roasted chicken with 40 cloves" (look up the recipe- it's awesome). I'm thinking of making some kind of side-dish and a salad for it.

(Hubby wanted to come home and use my basil plant that I've been taking care of for 2 weeks now to make pesto. I told him no-it's not going to take the whole plant and put it in the food processor to shred it up. I'd rather keep it and just a few leaves every now and then. And I realize how stupid it is to become attached to a basil plant.)

I have 3 basil plants! That's the only way I can make pesto without one plant being totally bare. I take a little from each plant. There's no way I could grow enough to meet my needs for the whole summer so I end up buying some at the grocery store too. Maybe I can plant 1/4 of an acre next year

85 degrees here today, but I got home early enough to put a roast in; my husband will be thrilled! Also a big salad, mostly for me.
