    If you don't feel like making a quiche, the Mediterranean one at the grocery store Bristol Farms tastes great!

    Egg rolls, jalapeno poppers, & leftover pizza for today.

    On my own again tonight, so I'll have arugula salad with carmelized onions, roasted beets and goat cheese. Yummy, is it dinner time yet?

    Sounds great, MrsC. We'll be having a stir fry of turkey sausage, onions, peppers, & zucchini over rice.

    Hubby has steaks marinating, green beans (hope his garlic ones) & I made a strawberry & freshly picked blueberry trifle.

    Of course :)

    Crustless Quiche
    8 eggs

    1 bag frozen chopped broccoli or chopped spinach (thawed and drained)

    1 cup shredded cheddar cheese, mozzarella cheese or crumbled feta (I use low fat but you can use whatever you have)

    diced peppers and onions (I don't measure it probably about half a pepper and half an onion)

    salt and pepper to taste

    Mix all ingredients well and pour into a glass pie plate or baking dish sprayed with cooking spray.

    Put in oven at 350 for about 35-40 minutes but I check the middle to see if it's set and not too brown.

    Even if you eat 1/4 of the quiche it only contains 2 eggs and lots of veggies! I'm sure you can use egg substitute also.

    Do you have to sautee the pepper and onion first or just put it in raw?

    I drove 6 hours back home yesterday to a family wedding, and then the 6 hours back today. DH stayed home because of work, and I came home to a pot of tomato-basil vegetable soup (with tons of fresh veggies from the farm stand! :) )

    On my way home from the gym this morning, I picked up some (non-raw) sushi & egg flower soup for today's lunch/dinner! I added some shitake mushrooms to the soup.

    For tomorrow's dinner, I'm marinating some organic chicken in chicken broth, spices, & tons of garlic. I'll have it w/ a salad.

    I've never seen pretzel rolls in the grocery store. Are they with the other breads?

    That looks delicious, TeacherNY! I think I'll have to make it later this week.

    I'm on my own again tonight, so I'll just heat up some of the leftover salsa chicken from the other night and make a chopped veggie salad.

    Going to my parents' house for dinner tonight. Haven't seen them in a couple weeks--mom has been busy getting her classroom ready (year 26 or 27 for her, I believe) and I've been swamped getting things prepared for teachers' arrival next week.

    Pork chops, green beans from the farmers' market, cucumber and tomato salad, rice for my husband. Grilled peaches with ricotta for dessert (although my husband will probably turn up his nose at it and have ice cream instead).

    We had zucchini noodles with tomato sauce and meatballs. Tomorrow is grilled chicken with homemade salsa!
