I made a crutless spinach/feta quiche for brunch.
For dinner we will have chicken on the bbq and a salad. For dessert I made grain free brownies.
Salmon, roasted baby potatoes, salad, fresh peas, strawberry-rhubarb crisp for dessert.

Southwest Adobe seasoned pork tenderloin on the grill with iced peach Nehi. Still looking for a side dish.

Chicken pot pie - We had chicken and dumplings a couple nights ago, and there was a bunch left (except most of the dumplings were gone). I froze some of it for a starter next time and the rest I'll use for the pot pie filling tonight. I'll have to put some more veggies in the mix to bulk it up a little though.

Haven't had red meat in a long while, so I'm making a steak and mushroom stir-fry.

I'm forcing myself to eat red meat tonight.... Making it with yummy spinach and a rice pilaf to, hopefully, let me not think about what I'm eating.

Went to Farmers Market today and got inspired by the veg! We're making panzanella salad and grilled salmon with a brandied pepper rub dh picked up from one of the vendors.
mmm...sounds delish! We're having grilled salmon and roasted brussel sprouts with fresh tomatoes.
I just now cooked. My electricity has been out all day due to storms. BF was going to bring over deer meatloaf, but he didn't have all the ingredients, and the grocery didn't have electricity.
I ended up having stuffed clams.
I did tinfoil veggies and a hot dog on the BBQ.

So far, planning to have sushi (non-raw) & frozen yogurt!
Tilapia (under the broiler with lemon and onions), summertime couscous, and steamed carrots.
Jägerschnitzel, egg noodles, corn fritters with fresh corn, sliced Jersey tomatoes, and homemade blueberry cobbler with Jersey blueberries.
DH made spaghetti with Italian spicy sausage which is great except he told me the food was going to take awhile (like over an hour) to be ready because the meat was cooking very slowly and he needed time to put the sauce together, so I should grab a snack.
So I did and no more than 10 minutes later he's like "Spaghetti's done!" But since I just ate a snack, I'm full. Kinda a blower because I would've rather gotten full on spaghetti than peanut butter crackers and a cheese stick.
Tonight is salad with grilled chicken and lots of homemade pickles!
I made tomato sauce and meatballs yesterday and I let it cook for 5 hours so it came out really good.
I had baked salmon, brown rice and tomato & cucumber salad...yummy!
I had tacos... Without any fillings. Somehow when I went shopping I got tacos but no lettuce or cheese. I also got salsa but no chips. Not sure where my head was at.
I had corn with it.
Pecan-crusted salmon and salad.
Ended up making quinoa (sp?) instead of the couscous--I've been wanting to try it, and figured trying it in a recipe I knew we liked was a good idea for a first attempt. It was pretty good!
*Prepare 1 cup (dry) couscous with a little thyme. Add 1 can chickpeas, 1 can diced tomatoes (I like to use the kind with Italian spices), garlic, lemon juice, salt, and pepper. Top with green onions and feta cheese. Sometimes I'll add some olives and/or capers if I have them on hand. You can serve immediately or chill first.
Bacon and tomato sandwich with fresh homegrown tomatoes.

Mmmm, I would love some home-grown tomatoes. I got an email from Pillsbury and checked out some chicken recipes for leftover chicken from last night. Think I'm going to make a casserole dish with chicken, veggies, cheese, and biscuits on top. Easy.
My dinner tonight will be very close to what I have been eating these past few weeks. My low carb meals consist of mostly seafood, salads, brown rice & veggies All the things I LOVE to eat!
I have even been having desert every night!!!!!
Dinner: Baked Flounder, BIG romaine salad, brown rice & broccoli!
Dessert: Frozen Chocolate Mouse w/cool whip free on top!
I am feeling so much better and close to losing the 20 lbs I have needed to lose all year
