What to do with the Thanksgiving Leftovers?

    What are your favorite ways of using your Thanksgiving leftovers for after-Thanksgiving meals?

    Yeah, Rebel. There are so many ways. :) I should re-phrase my question. What are your creative ways in using your left-overs? (beyond making soup or sandwiches with your turkey)

    I'm just curious. I only have leftover chicken. I planned to dump salsa and cheese on it for dinner tomorrow.

    The only leftovers I have are some turkey, stuffing, and cranberry sauce. I'm going to eat it just like that. I really don't like to make something new out of leftovers.

    Turkey dinner casserole! Dump the meat and veggies and gravy over noodles, mix in cheese if you want, then bake :)

    We have some stuffing, a little bit of turkey, sweetpotatoes, mashed potatoes and lots of rolls and we had our thanksgiving on tuesday. Think my mom went overboard. I am bout sick of it, but it might be cuz' I just had a big plate full for supper.

    We had leftover turkey, dressing, mashed potatoes, and sweet potato casserole. We used the mashed potatoes to make fried potato cakes for supper. I brought dressing home to eat as-is.

    Mom's making turkey salad for Sunday lunch, and we're finishing the sweet potato casserole then, too.

    Well! I fixed a 21 pounder for hubby & me. Hubby ate some of the breast meat and I ate both wings. We have the rest to use for the following...
    -Turkey fried rice...
    -Turkey tacos...
    -Turkey burritos...
    -Turkey salad...
    -Turkey noodles with gr peppers, gr onions, etc...
    -Turkey chop suey...
    -Turkey with taro or green bananas in coconut milk...(Yum!)
    -Turkey sandwiches...
    -Turkey quesadilla...
    -And last but not the least; not related to the turkey meat, I take the bones to my Science area for my Pre-K students to observe.:huh:
    It was always a hit with my Pre-Ks in CA!:D
    I hid them in the sand @ one time and the students did a dig to see who can find the most bones. It was so much fun!:)

    We had ham today. I will cook a turkey tomorrow when the rest of the family is here. I am sure we will eat a lot up just as is. But I make mole, stir fry, and chicken spaghetti (See the Pioneer Womans recipe site)

    Turkey pot pie tomorrow... I can't wait. We like to make open face sandwiches with bread, mashed potatoes, turkey & then gravy on top!!!

    I know someone who makes turkey soup.

    I just finished making a big pan of turkey enchiladas in green sauce. Yummy!

    Well, the 2 main dishes have been gone since yesterday: A lg pan of stuffing I made & the macaroni salad. So starting today, if we're eating, we have to cook something new. But, I don't think I'll be eating hardoy anything today to make up for what I ate the last couple days.
