Look what I made tonight!

    It's a spinach pie--my mom got the recipe from a local restaurant and it's AWESOME! Yum! I swear, the picture doesn't do its deliciousness justice :)

    I feel a little bad sharing the recipe since it is from a restaurant, but since you all don't live around here and can't go and get it, I will!


    1 10" unbaked pie crust
    14 oz chopped spinach
    8 eggs, beaten
    2 T. parsley
    3 T. dried onion
    1 tsp salt
    pepper, to taste
    2 1/2 cup shredded cheddar cheese
    4 oz cream cheese (microwave 30 seconds)
    1 cup parmesan cheese
    5 roma tomatoes (I used canned diced tomatoes and it worked just as well)

    Combine eggs, onions, salt, pepper, cheddar cheese and cream cheese.
    Fold in spinach last. Pour into crust. Top with parmesan cheese and thinly sliced tomatoes. Bake at 350 for 1 hour.

    Oh yum. Quiche is so easy to make and so expensive to buy. Thanks for sharing the recipe. I will be making it soon.

    That could be quite the challenge with all that egg and cheese! Hum, tofu? nutritional yeast? Hum..... Please share if you succeed, I'd love to make it for dh.
