Hi all:) how do you end a demo lesson, if say the students are completing a particular activity? Do you just say your bye's and leave?

I would wrap it up. Stop the students about 5 minutes or so before your time is over and review their work, ask them to share what they've learned, etc.

I do a closure activity like a sticky note summarizing their learning.

In my school it's customary to do a share at the end of a lesson/independent practice. There's plenty of times I don't get to it, but I would definitely use it as closure for a demo lesson. It's one of the best parts of the lesson when I'm being observed because the discussion between students gets so deep. Obviously if this isn't something the kids are accustomed to it might not be the "best" part, but it will definitely provide closure.
