I'm writing a test and have decided to add an essay where the students can choose one of three choices. How do I word the directions part of the question so I don't have any confusion (or at least hardly any confusion)?

What I have so far is this:
Essay Question: Choose one of the following questions and write a complete response to it.

but I don't think this is all I need to say. Help please!!!

I think it sounds pretty good! I might add that they should circle or underline the essay their choice (just in case the options are similar)

Additionally, I would have them all turn to the last page (or the page of the essay question) and go over it verbally. Then have the students repeat it back ask "How many questions will you answer?", "How many will I be grading?"

I would say to write a multi-paragraph response with a clear introduction and conclusion

I have high schoolers that still don't get this -

Here are the directions that I provide

You MUST choose ONE of the following three questions to answer. Your essay must completely answer the question and be written in paragraph format to be given full credit. You should refer back to the question frequently to make sure that you have completely answered all parts of the question.

What you have sounds good. I always tell them to include specific details on the topic we are studying. If they are reading a novel, I tell them to answer including quotes they can remember, actions the character took, how others responded to the character and more to complete their answer and make it detailed.
