Maybe you could have some copies available of Allsburg's other books and (as an enrichment activity) have the students who finish early read the books and do some kind of compare/contrast activity.
Or, since the setting is so important to the story (seasons of the year) have them fill out a graphic organizer that notes all the story details that specifically describe the season.
How are you planning on teaching the main inferring part of the lesson?
