Help Chicken What for Dinner?

    I have chicken breasts and cant' decide what to make. Any one have any good simple recipes?

    Wow!! You''ve got a lot now from which to choose.

    My mother in law does that chicken/broccoli/stuffing/cream soup thing- it's yummy but not healthy...

    CHICKEN, BROCCOLI, STUFFING CASSEROLE

    2 c. cooked, cubed chicken
    1 lg. bag frozen broccoli
    1 can cream of chicken soup
    1/2 c. mayonnaise
    1/2 c. chicken broth
    1/2 tsp. curry powder
    1/2 c. butter
    1/2 pkg. seasoned stuffing

    Cook broccoli (do not over cook) and spread on bottom of 9"x13" pan. Spread chicken evenly on top of broccoli. Combine and mix well soup, mayonnaise, broth and curry. Spread over chicken and broccoli. Melt butter and mix thoroughly with stuffing. Spread evenly on top of casserole. Bake at 350 degrees for 45 minutes.

    Which one looks good? Maybe you can substitute?

    OK, you put the link...Fish sauce, hmmm, I actually have it in my fridge (I think I bought it for a recipe...) Kind of salty, you could probably leave out. If you don't have fresh giunger you could use dried ginger (powder, like you bake with?). I never have that chili sauce they ask for - I've looked for it, no Asian markets in my neighborhood. I usually substitute either regular chili sauce or some ketchup and Tabasco...Coconut milk, hmm, can't help much there...

    I think I'll save that one for another time. I have to read ingredients in the fish sauce. Make sure no shell fish stuff in it. As far as coconut milk, I would probably just skip that part.

    My people left at noon to go play baseball (hubby and son both play) Haven't heard from them since. I need to finish my laundy, report cards and book a vacation...and here I am on the forums...

    Well that happens to me too. I have so many other things I could be doing and here I am.
    BASEBALL!!! Outside baseball? If they were playing that here they would be in snow up to their knees at least!

    season the chicken to taste, brown and dice.

    Simmer with olive oil, garlic, basil, oregeno.

    Server over pasta.

    I had chicken in the fridge the other night and made a stir fry with it. Simple and easy. Perhaps too much sodium though. Whenever I cook, it's got to be fast and simple.

    I just did the Baked Chicken Tortilla Casserole. It's ready but i'm waiting on rice. I never time the rice right. Oh well maybe in ten years I'll get it down!

    It was really good. The only thing I would change is put some chili peppers in it and use salsa instead of diced toms.

    When I was in my late teens this wonderful 500 year old puerto rican lady (okay, maybe she wasn't that old, but it sure seemed that way) taught me how to make rice HER way. I've used her technique ever since and it always comes out perfect. I get more compliments on my rice. Of all things to get complimented on.
