What veggie can you not live without? :)

I'd say ONIONS! I love them (scallions & red onions especially) & on everything (pizza, in salads, sandwiches).

I really love onions, too. I would say my can't live without veggie is mini sweet peppers. I love them raw with hummus and also oven roasted with garlic and olive oil. I eat about a bag a week.

My favorite onions are carmelized low and slow ( about 45 minutes) in butter or olive oil. Carmelized onions take time, but worth the effort if done right.

    Tomatoes!

But only homegrown ones. The store-bought ones aren't that great, although I do sometimes buy the cherry ones.

    I've never met a vegetable I don't like.

Tomatoes are probably my favorite. My stepfather grows a purple tomato that is amaaaaaaaazing.

I could most certainly live without all of the vegetables. I hate the taste- very bitter to me. I only eat them because they're healthy, and usually I try to have them in a nutribullet "smoothie" so I can get them over with quickly. Raw, spinach is probably the most tolerable to me (other than iceberg lettuce of course, but no nutritional value to that so why bother eating it) because I can eat it quickly and it doesn't have too strong of a taste.

I'm a pescetarian-a vegetarian who eats fish, so I MOSTLY eat vegetables and fruit. I don't have a favorite, per se, but I eat a lot of beans, greens, tomatoes and eggplant.

Soybeans. Awesome, healthy, and quick snack. I go through a couple bags of frozen ones every week!

Avocados. I'm not absolutely sure it's a veggie but I associate them as vegetables.
