First Day of School Breakfast

    I always like to have a special breakfast for my family the first day of school, to set everything on a good note. It's kind of been a tradition for the past 6 years. This year, we are having:

    Pineapple Strawberry Smoothie:

    Ingredients
    1 cup frozen strawberries
    3/4 cup milk
    3/4 cup pineapple juice
    1/2 cup vanilla yogurt
    2 tablespoons white sugar
    6 ice cubes
    1 teaspoon wheat germ (optional)
    Directions
    . Blend the strawberries, milk, pineapple juice, vanilla yogurt, sugar, ice, and wheat germ in a blender until smooth. You may need to scrape down the sides of the blender a couple of times. Pour into glasses and serve immediately.

    And...

    My Breakfast Casserole:


    Ingredients
    1 pound ground turkey sausage
    4 eggs, lightly beaten
    4 green onions, finely chopped
    1 (16 ounce) package frozen hash brown potatoes
    1/2 cup milk
    1 1/2 cups shredded Cheddar cheese

    Directions
    Place turkey sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
    Preheat oven to 350 degrees F (175 degrees C).
    In a large bowl, stir together eggs, green onions, hash browns, milk, cheddar cheese and cooked sausage. Pour mixture into a 9x13 inch baking pan.
    Bake in preheated oven for 60 minutes.

    A cup of coffee and Greek yogurt for me and probably cereal and milk for my daughter. Nothing fancy here! We normally are running behind as it is!

    Our first day tradition was warm chocolate chip cookies and milk when we got home. Even when I went off to college, my mom would find a way to get them to me (leaving them with roommates, hiding them in a container she knew I would have to go into, etc.). Now, she either freezes a batch and brings it when she comes to visit in the summer or mails them to me. :)

    LilyGirl01, sounds great. That's a nice back-to-school tradition! As for me, this is my first school year of work that I'll be living alone & I'll probably do what I usually have done on workday mornings...skip breakfast. I should at least make myself a smoothie though!
