Ooh, Pioneer Woman made a Strawberry Sparkle Cake that had me drooling!

I'm sure you've seen it on FB, but that recipe with the little ham sandwiches made on King's Hawaiian rolls with the butter poured over them :)eek:) is absolutely delicious!! I like roast beef with horseradish cheese best.

TG makes an incredible salsa out of strawberries. It tastes almost exactly like "regular" salsa, but has no tomatoes in it (which is good for people like me who can't even walk into a fast food restaurant because the airborne tomato particles from catsup will trigger anaphylaxis). The best part is that it works best with strawberries that are just starting to go past their prime, so if you have a bunch that are too soft to eat, but not quite bad yet, it's a perfect way to use them.

I usually make a salsa with mangos instead of tomatoes. It's a big hit at BBQs.

Ooh, I'm making mango salsa tonight!

Ambitious Kitchen's Kale, Endamame, and Quinoa salad has quickly become a favorite hot-weather dinner at my house.

And I love avocado and cucumber salad as a side.

For strawberries - cut them up, sprinkle with a little sugar, and pour in some white wine. Let them marinate in the fridge for a few hours. Toss in some fresh mint leaves right before you serve. Yum!
