easy pumpkin pie??

    Anyone know of an easy pumpkin pie recipe I could do with the children? Thanks.

    Very simple...and not to much sugar. However, adding a dab of whipped cream on top of each slice makes it even more delicious!

    1 (9-inch) unbaked pastry shell
    1 can (15 ounces) pumpkin
    1 can (14 ounces) sweetened condensed milk
    2 eggs
    1 teaspoon cinnamon
    1/2 teaspoon ground ginger, ground nutmeg and salt

    Preheat oven to 425 degrees. In large bowl, beat all ingredients together with whisk or mixer. Pour into crust and bake for 15 minutes. Reduce heat to 350 degrees and bake for 35 to 45 minutes longer. Cool before serving.

    We made "pumpkin pies in a cup", here's the recipe we used:

    • 1 can Libby's Pumpkin Pie filling
    • 2 boxes vanilla instant pudding
    • milk
    • 1 container of Cool Whip
    • graham cracker crumbs
    • small paper or plastic cups

    Prepare the vanilla pudding according to directions and refrigerate.

    Mix the can of Libby's pumpkin pie filling (not plain pumpkin) with the chilled pudding.

    Sprinkle a layer of graham cracker crumbs or vanilla wafer crumbs on the bottom of each cup

    Spoon pumpkin/pudding mixture into each cup

    Top each cup with a spoonful of Cool Whip

    This is very yummy and the kids loved it :)

    Pumpkin tarts are easy and delicious!

    1 pkg. (5.1 oz) instant vanilla pudding mix
    1 15 0z. can pure pumpkin (not pie mix)
    1 tsp. pumpkin pie spice
    1 c. milk
    8 oz. cool whip
    Mini fillo shells-comes in 18 count box (frozen section at gro.) or use your favorite light pastry crust recipe & make your own tart shells
    Thaw pastry shells while you prepare the pumpkin mix. Mix dry vanilla pudding mix with next 3 ingre., fold in cool whip. Fill shells. Light, fluffy, melt in your mouth! Just knowing that it has pudding & cool whip helps convince the pumpkin sceptics to give it a try. You can also adjust the pumpkin flavor somewhat by adding more cool whip and/or less pumpkin or spice. Enjoy!
    Oops! If I remember right, I bought 3-5 boxes of pastry shells for one batch of the pumpkin mix.
