easy pumpkin pie recipe???

    We're making pumpkin pie at school on Tuesday. I had a really simple recipe that involved no baking, but it has disappeared. Does anyone have a simple pumpkin pie recipe they could let me know about? Thanks.

    Here is the recipe that I use, but it does have to be baked.

    Perfect Pumpkin Pie
    1-15oz can pumpkin
    1-14oz can Eagle Brand Sweetened Condensed Milk
    (NOT evaporated milk)
    2 eggs
    1 tsp ground cinnamon
    1/2 tsp ground ginger
    1/2 tsp ground nutmeg
    1/2 tsp salt
    1-9 inch prepared unbaked pie crust
    Whisk pumpkin, Eagle Brand milk, eggs, spices and salt until smooth.
    Pour into crust.
    Bake 15 minutes in a 425 degree oven.
    Reduce oven temperature to 350 degrees and continue baking 35 to 40 minutes or until knife inserted one inch from the crust comes out clean.
    Cool.
    Garnish as desired.
    Refrigerate leftovers.

    (I double this and bake two pies at once. Also, I use frozen pie crusts.)

    Get the pumpkin pie FILLING in a can - not canned pumpkin. It has all the spices, etc in it already. Just pour into a pie crust and bake.

    Or try:
    NO COOK PUMPKIN PIE

    1 baked pie shell
    1 c. cooked pumpkin
    1 pkg. vanilla instant pudding mix
    3/4 c. sweet milk
    1 c. Cool Whip
    2 tbsp. pumpkin pie spice

    Mix all above ingredient sand pour into pie shell and top with remaining cool Whip.
    NOTE: Use pudding in powdered form.

    What about pumpkin pie in a cup? I'm going to try it this year. I'm just not sure how much this recipe serves.

    Materials: 1 can Libby's Pumpkin Pie filling, 2 boxes vanilla instant pudding, milk, 1 container of Cool Whip, graham cracker crumbs, 3 oz size paper or plastic cups

    Prepare the vanilla pudding according to directions and refrigerate.

    Mix the can of Libby's pumpkin pie filling (not plain pumpkin) with the chilled pudding.

    Fill a 3 oz. cup with a layer of graham cracker crumbs or vanilla wafer crumbs

    Spoon pumpkin/pudding mixture into each cup

    Top each cup with a spoonful of Cool Whip

    Here's my favorite recipe:

    1. Walk/Drive to the nearest bakery

    2. Find a pumpkin pie

    3. Take the pie to the cash register

    4. Purchase the pie

    5. Drive home


    I realize though, this may not be as fun to do with your class.

    I just saw this in my grocery store last night and was tempted to buy it except that I have an awesome family recipe for pumpkin pie. It's a new flavor of jello pudding called pumpkin spice or something like that - neat recipe included that turns out layered. Please note: No real pumpkins gave their lives for this project.

    We use the pumpkin pie filling with the spices already added in. We add evaporated milk & a few eggs & mix. The recipe is on the can.
