Cornbread Recipe?

    I have a craving for cornbread to serve with the chili I'm making for dinner tonight. Who has a tried and true recipe?

    I love to make mine in an old cast iron skillet. I just go buy the recipe on the bag of cornmeal. I also like to add a can of chopped green chilis to the Jiffy mix. It makes great muffins or cornsticks. The chilis cut the sweet taste and its very tender.

    For real! This is some pretty delicious cornbread and it's super cheap and easy! It's like the hooker of cornbread. :)

    I've never seen boxed/packaged cornbread here; it will have to be from scratch.

    I buy cornmeal mix in 5 pound bags. I add milk until it's the consistency I want, and then pour it into a greased cast-iron skillet and bake until golden brown on top.

    Sometimes I also fry it on the stovetop instead of baking it. My MIL is coming for supper tomorrow night, and she's requested my fried cornbread.

    I guess the next time I'm in the U.S., I'll have to add cornbread mix to the list of things I need to get at the supermarket to bring back. I made the recipe that janlee posted the link to and it hit the spot!

    Glad you enjoyed it MrsC. I haven't made it in a while. I'll have to whip up a batch of chili so I have a reason to bake some corn bread.
