    Pesto zucchini "noodles" (using my Veggetti instrument) w/ red onions, tomatoes, & organic chicken.

    Also some California roll sushi (I never eat the raw kind).

    I had grilled shrimp w/rice & steamed broccoli, cesar salad and the most delicious warm bread. I went to Longhorn Steakhouse with my brother and his wife for dinner tonight :p

    I might have a salad but I'm not sure. I'm making my husband a chicken dish that I really don't like so while he's eating that I can eat whatever! The only problem is that it has to be healthy!

    Oriental salmon salad: salmon baked with teriyaki sauce and sesame seeds, field greens, sauteed onion, peppers and snow peas, green onion, baby corn, tangerine sections. Yummy!

    That dessert sounds good! I had some apple crisp that I made with the apples from my tree. We didn't get that many off the tree this year but if I buy maybe 2 more apples from the farmer's market I can make another apple crisp this weekend!

    I just threw in some flour around berries... then made a crumb topping...flour, brown, sugar, cinnamon & butter. It was good but I thought I had shaker side of cinnamon but was spoon side. Good thing we like cinnamon! ;)

    How did you like your zucchini noodles? I think having them with pesto is my favorite!

    Thanks for asking! So that was the 1st time I made them. I think I cooked them a little too long...kind of soggy, but it was good. I'll have to find a good recipe on how to really flavor it because the pesto, seasoning, & olive oil didn't taste quite as good as I thought. I LOVE how many less calories it is than actual pasta!

    I think if you cook it just a little less the zucchini taste will be less strong and whatever sauce you put on it will taste better. I made a pumpkin alfredo sauce a few days ago and it was pretty good.

    I saw a jar of Pumpkin Pasta sauce in the grocery store that was light orange in color so I figured they added some sort of cream so and I already had a jar of the alfredo sauce so I figured I'd try to make it myself.

    Last night we picked up BBQ (pulled pork sandwiches, baked beans, coleslaw, and potatoes) and ate it IN OUR NEW HOUSE!!! :)
