I'm marinading some chicken in 2 marinades:
#1 - recipe I saw on Sandwich King
bit of all spice
hot chili powder
#2 - my simple creation
garlic pepper seasoning
By the way it smells, I'm liking mine better!
I made a coconut lime chicken from Martha Stewart a few nights ago (comes up on Google if you're interested). It was amazing. I changed it a bit by using boneless chicken breasts, pounded to about 1/2 inch. I marinated for about 4 hours.
I served it with white rice cooked with a blend of water and coconut milk, tossed with red beans (after the rice was cooked). Drain and rinse the beans before adding to the rice.

We just had left-overs tonight; need to do that another couple of times in the next few days.
I made salmon with dill sauce. Last night, I made vegetable lasagna and tomorrow night, it'll be chicken and shrimp stir fry.
A savory sweet potato souffle, Caesar salad, Chardonnay.

We had pasta stuffed with chicken and cheese and sauce, peas and green salad. I am trying to add more veggies to our diet.
I don't know what we will have tomorrow night. We eat a lot of chicken--so some sort of chicken dish with 2 veggies.

Raw veggie wrap in Lavish bread from TJ's with:
- spicy hummus spread
- red cabbage
- red bell peppers
- English cucumbers

- spinach leaves
- mozarella cheese

I was expecting no-thinking-required leftovers, since the household population is down by one - but the leftovers got scoffed up, so I've had to invent something. It involves sausage and onion and French green lentils and canned tomatoes (sorry, mm!) and such, and I'll let you know how it comes out.
Brinner, which tonight is comprised of crepes, scrambled eggs, bacon and strawberries.
Oh, and it's cooking from start to finish in the microwave.
