What's for Dinner?

    I'm marinading some chicken in 2 marinades:

    #1 - recipe I saw on Sandwich King
    bit of all spice
    smoked paprika
    cumin
    hot chili powder
    garlic
    olive oil

    #2 - my simple creation
    garlic
    garlic pepper seasoning
    onion powder
    olive oil
    lemon juice

    By the way it smells, I'm liking mine better! :)

    I made a coconut lime chicken from Martha Stewart a few nights ago (comes up on Google if you're interested). It was amazing. I changed it a bit by using boneless chicken breasts, pounded to about 1/2 inch. I marinated for about 4 hours.

    I served it with white rice cooked with a blend of water and coconut milk, tossed with red beans (after the rice was cooked). Drain and rinse the beans before adding to the rice.

    I made salmon with dill sauce. Last night, I made vegetable lasagna and tomorrow night, it'll be chicken and shrimp stir fry.

    We had pasta stuffed with chicken and cheese and sauce, peas and green salad. I am trying to add more veggies to our diet.

    I don't know what we will have tomorrow night. We eat a lot of chicken--so some sort of chicken dish with 2 veggies.

    Raw veggie wrap in Lavish bread from TJ's with:

    - spicy hummus spread
    - red cabbage
    - red bell peppers
    - English cucumbers
    - jalapenos
    - red onions
    - spinach leaves
    - mozarella cheese
    - garlic pepper seasoning

    I was expecting no-thinking-required leftovers, since the household population is down by one - but the leftovers got scoffed up, so I've had to invent something. It involves sausage and onion and French green lentils and canned tomatoes (sorry, mm!) and such, and I'll let you know how it comes out.
