What's for Dinner?

    My mom never made tator tot casserole with cream soup--chicken and rice was what she always used, along with frozen mixed vegetables. It's one of my favorite comfort foods. :)

    We went out for Mexican food. Somehow the restaurants make it soo much better than me.

    I had Mexican food too...chicken enchiladas w/ rice & beans.

    There's a new Mexican restaurant that just opened up around here. I really want to go try it out but my husband hates anything with rice, beans, and tortillas! I'm hoping if he looks on the menu ahead of time he could find something he likes and we can go!! Otherwise, I will see if any friends want to go.

    Tonight--almond crusted chicken breasts, roasted broccoli and cauliflower, tomato and cucumber salad (and some cheesy pasta for my husband).

    You all make such amazing meals!! This single girl is tired of cooking for 1, so I usually make eggs, a hot dog or a chef salad. This thread is inspiring though, and occasionally I change it up with some of your awesome meal ideas.

    Dh made pulled pork. I made Mac and cheese to go with, DIL made an apple cole slaw...yum.

    Miss, I know how hard it is to cook for one. Can I suggest some items? How about buying one pork chop or one steak? I keep Boboli pizza crust in my freezer. I can make a quick pizza with Prego and some cheese. Search the frozen food section. I buy frozen chicken which can be cooked from the frozen state. Some of the expensive frozen meals are okay. Good luck.

    I don't really eat a lot of meat, but I do keep cooked chicken in the freezer. I know every trick in the book about preparing freezer meals and how to plan for meals for 1. I just think sometimes it would be more motivating to have others depending on me for a real meal :lol:.

    Breakfast for dinner! Egg white omelette with spinach, kale, spring onions and goat cheese (and a couple of strips of bacon alongside).

    I came home at lunch and put something in the crock pot. Chicken breasts with a couple of boxes of cheesy potatoes. My family loves it. The potatoes I bought were ranch flavored with bacon and the house smelled wonderful when I got home. My son can't wait to get home from work. It wasn't quite done when he had to leave at 4:15 for work.

    Last night my hubby put on some BBQ! The night before I didn't feel like eating what he was eating so I melted some Gouda cheese and dipped some raw veggies in it. It was a quick fondue like meal and it was yummy!!

    Last night was scrambled eggs, pancakes, and bacon. Tonight will be some kind of takeout. My sister comes over every Thurs. and spends the night and we chill out and watch tv and don't do any work at all.

    Tonight will be hummus, pitas and veggies. We have this every Thursday night since I am out until late and hubby can just munch on it right out of the fridge.

    Tonight I had salami and watermelon! Wasn't too hungry so I had something light.

    Last weekend I made apple BBQ chicken.
    Chicken breast wrapped in bacon. Sauce was sweet baby rays with brown sugar and lemon juice mixed with diced apples. Baked in 350 oven for 45 mins. Delicious!

    An arugula mix salad w/ green onions, habanero sierra jack cheese, hard boiled egg, & avocado w/ ranch dressing AND inari sushi.
