Lobster & shrimp lasagna!
It's Friday. We're sipping cocktails and Ordering out...cheers y'all.
Leftover chicken breasts and spaghetti squash went down nicely with a 'generous' glass of Merlot.

We had salmon and asparagus tonight. Wanted to bake an apple pie, but ran out of time.
Tonight is cod with a puttanesca sauce on top, couscous and salad. My dh is an awesome cook.
Lean turkey sausage, baby potatoes, broccoli, mixed green salad.

- Organic chicken breasts marinated in a lemon juice, olive oil, garlic, & spice blend
- Cool, (English) cucumber salad w/ a sesame ginger dressing
Tomorrow's pizza night at my apt complex where a medium cheese or pepperoni pizza is $5...no limit on how many pizzas you buy. I'll probably do that.
Last night was all Pioneer Woman for dinner. I had just put a roast in the crock pot, when her show came on. She was making her Drip Beef, so I modified the recipe and made my own. Added a side dish of her Sliced Baked Potatoes, and my kids were in heaven. No school today, so we had it again for lunch!
Tonight...probably leftover drip beef and sliced baked potatoes!
Stir-fried shrimp with sugar snap peas, mushrooms and lots of garlic. Yum!
My mom is in town. She made me a roast in the crock pot, along with butternut squash and spinach salad with warm vinegar dressing and bacon (my great-grandma's recipe!).
I've been craving a burger...

BBQ teriyaki chicken, baked beans, cole slaw. I had to clean out the refrigerator, so created some interesting dishes.
I looked up drip beef--yummy. I will be making that soon.
Pork loin with Cajun seasoning and a medley of sauteed vegetables (yellow and green squash, carrots, red onion, red peppers, garlic). I copied the recipe from a restaurant we went to recently and my hubby says I made it better than they did!
Baked beans/cole slaw is my favorite combo! I order it every time we go to a local BBQ restaurant.
It was amazing. It seems strange, with the peppers, but wow...I think I would only put it about half of the juice of the peppers next time. Hubby thought it was a little "pickle-y", but I loved it!
Yesterday, I had some of a few things throughout the day:
- Several bites of bacon, cheddar fries w/ onions & sour cream from Hot Fries
- Some Cinna-Bitz from Wetzel's Pretzels
- Leftover cheese pizza
- Lemongrass chicken egg rolls
Today, I don't know yet, but I'll probably make my homemade ranch dressing & eat them with the rest of my organic carrot sticks.
I've been seeing recipes for tater tot casseroles on Pinterest , so I'm making my version of one. I'm not using the cream soups so I don't know how it'll turn out.
Dh made a Tuscan bean soup with cannellini and fava beans with kale...yummy and healthy...
