Need some easy meals

    With school starting in 3 weeks :eek: and me having a lot o workshops and meetings in that time I am back to looking for new, easy meals to make ahead of time. I love my crock-pot and my husband loves our grill. My family likes the basic type of meals, nothing fancy, but we are tired of the same ole same ole.

    So, what are some of your tried and true recipes that you and your family like that are easy?

    What about pigs in a blanket? Do you have children? If so, they will love them. You DH might like them too. I know mine does. I can't stand the things. I ate them too much growing up.

    2 packages of Pillsbury croissant roll (the kind that come with 8 in them)
    Cheese folded into the shapes of triangles
    Hot Dogs cut in half

    Pop open the packages and unroll some of the croissant strips. Place a piece of cheese in. Then place a hot dog half on the skinny edge of the croissant piece. Roll it up. There's your Pig in a Blanket. Do this with the rest of them. Pop it in the oven the amount of time that it says on the croissant roll package. I like to spray my baking sheet with some cooking spray first, so that they don't stick to the baking sheet. It makes it easier to get the cheese off of it.

    i buy the mrs. grass's vegetable beef soup mix. I add cubes of beef and the soup mix in my crock pot and its done in about 3 hours.

    I also marinate chicken breasts in Italian salad dressing for an hour, and put it on the george foreman. While the chicken is marinating i cut up red potatos and roast them with olive oil and italian seasoning and a little garlic salt. put in oven for 45 mins covered with foil.

    Turkey Meatloaf.

    1 Package of Ground Turkey
    1 Box of Turkey Stuffing
    1 Egg
    1 Cup of Water

    In mixing bowl, mix all of the above ingredients

    Use any kind of oven-safe dish, but more on the flat side is better (we usually use a circle)

    Cook 45-50 minutes at 350 degrees

    i hate regular meatloaf .... but this....It really is delicious & easy to prepare (less than 5min!). We usually eat it with brown rice & some cranberry sauce but french fries also work.

    Quick and Easy.

    PUMPKIN MELTS
    Slice of bread, Slice of Cheese
    Use pumpkin or other shape.
    Call them_--the shape--_Melts.
    Cut out shape from bread and cheese.
    Put cheese cut out on top of bread cut out.
    Melt in microwave and eat.
    FROZEN PUMPKIN DESSERT
    Graham cracker crust.
    1-quart vanilla ice cream
    1-cup pumpkin
    ½ cup brown sugar
    1/2 tsp cinnamon
    ¼ teaspoon nutmeg
    ¼ teaspoon salt
    Cool Whip and Pecans
    Let ice cream soften enough to allow stirring.
    Stir in all ingredients and pour in 9x13
    inch pan with graham cracker crust. Freeze.
    Before serving, add Cool Whip and top with pecans.
    CHERRY SALAD
    1 can cherry pie filling,
    1 (20 oz) can crushed pineapple,
    1 can Eagle Brand condensed milk,
    ¼ cup Walnut pieces.
    Mix all ingredients; add 1 large carton Cool Whip.
    Eat. It may be frozen.

    Chicken Nugget Casserole
    Put a box of chicken nuggets in a casserole dish, cover with a jar of spaghetti sauce and Mozzerella cheese. Bake at 325° for about 30-45 minutes, until cheese is melted and it's bubbly.

    PIZZA ROLLS
    4-oz can pizza sauce, Flour tortillas,
    Shredded cheddar and/or Mozzarella cheese
    Spread sauce evenly over flour tortillas.
    Sprinkle shredded cheese evenly over pizza sauce.
    Microwave 40 seconds or until cheese is melted.
    Roll up tortilla and eat.
    COOK A HOT DOG IN THE MICROWAVE
    POP A BAG OF POPCORN IN THE MICROWAVE
    BAKE AN APPLE IN THE MICROWAVE
    BAKE A POTATO IN THE MICROWAVE
    HEAT A CUP OF WATER AND ADD A PACKET OF HOT COCOA MIX
    HEAT A CUP OF WATER AND ADD A PACKET OF APPLE CIDER.
    Can they use a crock-pot? Lots of good crock-pot recipes.
    HAM AND SCALLOPED POTATOES
    6 or 8 slices of ham. OR
    A package of slivered ham works great also
    10 med potatoes sliced
    1 teaspoon chopped onion
    4 teaspoons bacon bits
    1 cup grated cheese
    1 – 10oz can cream of mushroom soup – undiluted
    Put half potatoes, ham, onion in Crock-pot,
    sprinkle with salt, than ½ grated cheese,
    ½ bacon bits….Repeat remaining half.
    Spoon over undiluted soup over top.
    Cover and cook on Low 8 hours or High four hours.
    Cook until potatoes are soft.

    Gourmet Potato Soup

    3 slices of bacon chopped
    1 Cup chopped onions
    2 - 3 cups of chicken broth (14 oz can)
    1 can cream of chicken soup
    1 pkg of shredded hashbrowns- 2 lbs
    1 Cup of sour cream
    2 Cups shredded sharp cheddar cheese
    1/4 tsp. pepper

    Cook bacon and onions, add broth and potatoes and bring to boil. Lower heat until potatoes are done, add cream of chicken soup and pepper. Stir in cheese and sour cream.

    Chicken Casserole
    Preheat oven to 360 degrees.
    Cook a 16 ounce package of shell noodles.
    Drain and add a can of chicken.
    Add a can of Cream of Mushroom soup.
    Add a soup can of milk. Add a bit more milk if the casserole seems a bit dry. Put in a casserole dish and top with crushed crackers. Bake for about 20 minutes or until the crackers are brown.

    Tuna Casserole is the basically the same.
    Preheat oven to 360 degrees.

    Drain and add a can of tuna.
    Add a can of Cream of Celery soup.
    Add a soup can of milk. Add a bit more milk if the casserole seems a bit dry. Put in a casserole dish and top with crushed crackers. Bake for about 20 minutes or until the crackers are brown.

    Tatter-Tot-Casserole
    1 lb hamburger
    1/2 package onion soup mix
    1 can cream of chicken soup
    1/2 cup milk
    Tatter tots to cover
    Press hamburger in bottom of casserole dish. Sprinkle with onion soup mix. Mix milk and chicken soup. Pour over the hamburger. Cover with Tatter Tots. Bake one hour at 350 degrees.

    Santa Fe Enchiladas
    1 1/2 lbs ground beef
    1 12oz can tomato paste
    1 cup water
    1/4 cup chopped onion
    1 teaspoon salt
    12 tortillas
    1 8oz jar Cheeze Whiz.
    Crumble meat in bowl. Microwave 6 to 8 minutes or until meat loses pink color when stirred, drain. Add tomato paste, water, onion and salt. Microwave 3 minutes or until hot. Wrap tortillas in paper towel. Microwave one or 2 minutes or until soft. Spoon meat mixture on each tortilla roll-up tightly. Place in 11 3/4 by 7 1/2 inch baking dish. Cover with cheese then meat mixture. Microwave 6 minutes turn cover and microwave 5 minutes.

    Taco Salad
    1 pound Hamburger, onion to taste. Brown
    Add: 1/2 envelope Taco seasoning
    1/4 cup French dressing
    1 can kidney beans
    Mix with hamburger. 1/2 pound shredded cheese
    2 Tomatoes

    Hamburger Sloppy Joes
    1 pound lean ground beef
    1/4 cup catsup
    1/2 Tablespoon prepared mustard
    1 can chicken gumbo soup.
    Brown ground beef in skillet and drain. Combine ingredients. Simmer for 30 minutes. Serve between hamburger buns.

    When your at the Dollar Store pick up a plastic bear of honey and buy some cheap biscuits in a can. Bake and add butter and honey.

    Sugar is sweet.
    Honey is too.

    You just mix up a cake mix by the package directions, put two tablespoons in a flat bottomed ice cream cone and microwave 6 of them at a time for 1 1/2-3 minutes.
    The kids love it because they can actually watch the batter bake and rise up out of the cone. Try it in the microwave you will be using first as some microwaves make the cones soggy.
    Crock Pot Pork Chops ---Put the pork chops in the crock pot with 1 small bottle of Italian Dressing.
    Parmesan Chicken --dip chicken strips into butter and then dip them into 1 package ranch dressing powder, 1/4 cup of parmesan cheese, and 1/2 cup of bread crumbs and bake it for 1 hour.

    Here's my cheap and quick fall-back meal. My own Ramen Noodle concoction...

    ground beef or chuck- scrambled, browned, drained.
    1 large can of Veg-All
    2 pks Ramen noodles whatever flavor you like
    small can of mushroom if you like them

    In the water for the ramen noodles, go ahead and put the veg all in there while it is getting ready to boil. Cook the ramen noodles as directed, drain most of the water off, add the seasoning packets and the cooked ground beef. Stir it up really well and eat! CHEAP, SIMPLE AND GOOD! :)

    Tonight I made sort of a chicken parmesan:

    BAke chicken breasts with Italian seasoning on them at 350-375 until cooked-15-20 min, I think.

    Top with spaghetti sauce (I used vodka sauce and it was very good) and Italian cheese. Bake til the cheese is melted.

    Put on spaghetti noodles if you like.

    fried eggplants,zucchini and green peppers with plain yoghurt

    1250 gr eggplants.
    1500 gr zucchini
    salt
    Sauce:
    a piece of cucumber
    finely chopped.
    250 gr yoghurt
    2 tbs salt
    4 cloves of garlic

    Peel the eggplant in lengthwise strips
    then cut either in circles or in long slices.
    Sprinkle salt over and place the eggplants in salted water for half an hour to drain off their bitter juices.
    Squeeze each eggplant before putting into hot oil.Fry boyh sides,drain away excess oil and place on a serving plate.Scrape the skin of the zucchinis until their green parts can be seen,sprinkle with salt and leave aside for 1,5 hours.Put flour and water into a bowl and blend together.First place the zucchini in flour-water mixture and then into the hot oil.Fry until both sides are golden.Place them with the eggplants and peppers.Mix cucumber and yoghurt ,pour over the fried vegetables(if desired,crushed garlic can be added to dhe yoghurt).

    Any good easy ones that don't have cheese? Ideas wanted.

    Here's my idea for a start:
    Baked potatoes with chicken and veggie topping.
    Bake enough potatoes for everyone. Then in a pan, stirfry cut chicken your choice of veggies (fresh or frozen). Once cooked through, add a little broth and cornstarch to make it a little gravy-ish. Serve over the potatoes.

    Take cube steak, roll it in flour, then egg/milk mixture, and then flour again. Brown it in a small amount of oil. Place in crockpot and place slice onions over it and a package of brown gravy mixed with 2 cups of water. Cook all day on low. Yummy! You can brown it the night before and place into refridgerator until ready for crockpot.

    Mix a can of cream of mushroom soup, cream of chicken soup, one can of green chili enchilada sauce, and one cup of sour cream. Layer it in the crockpot with browned ground beef, soup mixture, tortillas, and cheese. Then continue with the layers. Cook on low. If you want to be sneaky, I place thinly sliced squash between the layers.

    I take one pound of sage sausage, one pound of ground beef, half cup of Italian breadcrumbs, and one egg. I take half and make a meatloaf for dinner. The other half I bake into meatballs. Then I freeze the baked meatballs for a quick dinner. I either make the meatballs into spaghetti or into meatball subs. My kids love them. Two meals--one prep time.

    Leftover steak

    I always keep on hand a small can of mushroom steak sauce. It is really more like gravy.

    Leftover cooked steak, cut in strips
    1 small can gravy
    onions, if desired

    Simmer the steak in the gravy. If using onions, saute them first and include.

    Make instant Idahoan potatoes - three cheese flavor are great. Serve with green beans.

    Takes about 10 minutes.

    I make this all of the time and kids love this because it tastes like a real cheeseburger.

    Cheeseburger Pizza:
    fry 1 lb. of ground beef or ground chuck
    put Pillsbury pizza crust on bottom of 9x13 baking pan (it comes rolled so just unroll it from the tube)
    drizzle ketchup and mustard on crust
    add fried ground beef
    add whatever you like on a cheeseburger except the lettuce
    drizzle on more ketchup and mustard
    top off with another pizza crust and pinch all around the sides to seal it in
    bake according to the directions on the pizza crust tube

    I usually add diced tomatoes, pickles, onions, and shredded cheddar cheese. The ketchup and mustard really make this taste like a true cheeseburger.

    I have bookmarked time2teach's blog site she mentioned. She has so many recipes. I love that she rates it after they eat it. Need to spend some time and go thru it!

    Carnitas tacos...

    Throw the pork and seasonings in a crock pot and come back several hours later after it is starting to fall apart. Shred the pork, put it in a shallow tray and brown in the oven. You can use it immediately or refrigerate and nuke when ready.

    Nuke a flour tortilla, add carnitas and diced tomatoes, shredded lettuce, or whatever you like plus your favorite mild or hot salsa.

    I can eat this for days on end...

    I like to make "Rushin' Meatloaf"...pre-cook ground beef (about 1/2 lb.) and elbow noodles (do NOT overcook!). Then in a casserole dish, layer beef, noodles, peas (I use one can), and top with one can of tomato soup. (Personally, I like it less "dry", so I add an extra can of tomato soup after I put the beef in!) I cook it for about 30 minutes at 350 degrees. I usually make it when I have left over ground beef from another meal...and if you make enough, it is good for a few meals!
