So; I was asked to do a 40 minute demo lesson for about 10 5th graders next week. It can be on any subject/topic of my choice. Any tips or ideas? It’s a heck of a lot of time! Lol. I just want to make it as smooth as possible!

I'm sure the time will fly! The thought of it is just daunting..lol. Math is definitely my favorite. Is it a poor choice to do some kind of GAME? I'm thinking maybe some kind of interactive activity for fractions.
Math isn't my thing, but interactive activities, in general, would be something I would like to see included in the lesson.
If you were doing a demo lesson in my district (although demos aren't done here), you would be expected to include an interactive game, puzzle or activity in your lesson.
I would make sure of the following: - have standard based objectives and communicate them to the students - have a component of direct teaching, guided practice, independent practice (I do, we do, you do) - you could include a small group activity in addition if you can - make sure you have a closure activity, this can be reflection, anything Have your detailed lesson plan typed up and hand it to the observers or have them available for them.
